Lightly salted salmon in sweet and sour sauce

Ingredients

salmon fillets 700 g
sea salt 600 g
sugar 200 g
orange 2 pcs
dijon mustard 1 tbsp
honey 1 tbsp
juice of half a lemon
olive oil 100 ml
water 50 ml

Cooking method

  • The recipe is taken from one of the culinary TV shows. I changed it a bit to my taste, because the fish was not completely salted behind the TV recipe, as for me. And so, put the salmon fillet in the bowl, skin side down. Rub it well with a mixture of salt and sugar, cover the top with chopped rings with oranges. And sprinkle everything well with a mixture of salt and sugar that remains. It turns out a fish in a sugar-salt coat. We put in the refrigerator and marinate from several hours to a day, depending on who loves salted. I like it to be salted well, so marinate for a day. After the time has elapsed, wash off the remaining salt under running water. Dry with a paper towel and cut into thin slices. Drizzle with sauce before serving.
  • For the sauce, mix mustard, honey, butter, boiled water and lemon juice. Beat with a whisk.
  • The sauce is just a bomb. And in combination with salmon ... mmm ... lick your fingers!

Time for preparing:

from several hours to a day

Note

Our family is very fond of salted fish - be it herring, mackerel or salmon. But everyone simply adores salted red fish. So this recipe for salting, which we once saw on TV, stuck with us. No holiday is complete without this delicacy. The husband says that this fish can be eaten with the fingers. Tasty fish moderately salted with a delicate hint of orange under a delicious sweet and sour sauce with a pleasant pungency of mustard ... very tasty and delicious, and for us the most favorite recipe!

Galyainteresting with oranges. That is, then they don't go anywhere else, only give the salmon aroma during the salting process? Do you feel a hint of orange in the finished fish?

Happy New Year!
Akvarel
Yes, then I throw out the oranges. And the finished fish has a pleasant orange flavor
Thank you, and Happy New Year holidays

Akvarel, Galyathanks for the salmon recipe! and sauce, never made with oranges, you must try. I take it, sauce for serving? Or should you keep a salted fish in it? That will not be eaten: oops: immediately
Akvarel
Oksana, yes sauce for serving. Corrected in the recipe, thanks

I also often salt red fish. And as additives I take an orange or lemon (which is at hand). And add a little fish seasoning (black and white pepper) to the salt and sugar. It turns out to be delicious)))
Thanks for the sauce idea !!!

No oranges (allergy). There are sweets and lemons. And pink salmon in the freezer.
I will do
Akvarel
schoy, not at all, do it for health.
OlgaGeraI think it will be very tasty with lemon too
biankausa
Made half of frozen salmon. It turned out saltier than usual, the fish was denser and the orange flavor was not felt at all. Next time I'll take a fresh one, compare.
Akvarel
biankausa, I wrote in the recipe that I love to be well salted for this marina day.If you like the fish to be less salty then marinate for 3-4 hours. Try it, if not marinated, marinate again. 3-4 hours is not enough for my taste, so I marinate more. Why didn't you feel the taste of orange .... maybe next time try putting the orange rings right on top of the fillet, and sprinkle with salt on top. I don’t know, try squeezing the juice on the fillet. I have a slight hint of orange. But I just rub the fillet with a mixture of salt and sugar, then an orange, and then sprinkle it well with salt that remains.
