Ingredients

pork tenderloin 600-700 gr
pork lard (can be salted) 100-200 gr
bulb onions 2 pcs
carrot 1 PC
sour cream 200 g
tomato paste or ketchup 2-3 st. l.
caraway pinch
salt pepper taste
vegetable oil for frying
cheese 100 g

Cooking method

  • Cut the meat into slices and beat well. If you wish, you can marinate it, I sometimes put it in a bag, sprinkle it with spices and add a few drops of wine vinegar. I store it in the refrigerator for 2-3 days.
  • Grate the carrots, chop the onion. Heat vegetable oil in a frying pan and fry the onions and carrots in it, adding cumin. Add salt and pepper to taste.
  • Finely chop the bacon or roll it in a meat grinder. With lard, "gophers" will certainly be tastier, but if there is no lard, then it will also be delicious without it.
  • Put some bacon and fried vegetables on a broken piece of meat, roll tightly.
  • Fold the "ground squirrels" prepared in this way into a form greased with vegetable oil, pour with a mixture of sour cream and ketchup, sprinkle with grated cheese on top.
  • Bake in the oven at 180 C until tender, about 40 minutes.
  • Our favorite side dish for "gophers" is buckwheat porridge and a bunch of greens.

Why this dish is called "gophers" I do not know how to say, "for what I bought, for what I sell!". I found the recipe at the beginning of the two thousandth in the magazine "I Love to Cook", I bought it in order to diversify the culinary repertoire. Earlier in this magazine the hostesses shared their favorite homemade dishes and "gophers" is one of them. His name is, of course, funny, especially when someone from the family asks "What do we have for lunch?", And I answer "Gophers!", At first they had a slight shock from such an answer. Nevertheless, the dish has stuck and we love it very much, especially it helps out when there is no time for cooking, and this happens very often lately.

We cut the bacon thinly and longly (you can smoked it) and
also long salty noodles.
Just as thin and long is a half of a raw onion.
Wrap in a chop, simmer in broth until completely soft.
Serve with sour cream sauce + tomato paste. Greens to taste.
Only I have them called "Jump in the mouth"
