Snow White Coconut Cake

Ingredients

Biscuit:
eggs 6
Sugar glass

Cooking method

  • Dedicated to all coconut lovers!
  • Cooking a biscuit. The biscuit can be baked according to any recipe according to which you get it. I bake it with baking powder. Beat the eggs well, gradually adding sugar, into a good foam. Mix the flour with a baking powder and sift at low mixer speeds, add to the foam. We turn on the oven for 170 g ... cover the form with paper, pour out the dough and bake until tender. (I usually bake a biscuit the day before assembly)
  • Souffle. Beat the whites as on a meringue, gradually add sugar. Next, add the coconut flakes and mix gently from top to bottom. We cover the same form in which the biscuit was baked earlier, cover it with paper and spread the coconut mass, level it. We put in a preheated oven to 180 g for 20-25 minutes. The cake will be reddened like a biscuit, then you can take it out.
  • Cream. Remove the butter from the refrigerator. Beat the yolks well with flour, add a couple of tablespoons of milk and mix well. Pour in the remaining milk and put on the fire, stirring constantly. The custard is very thick. after readiness, cool to room t. We begin to whisk the butter, gradually introducing sugar ... then a spoonful / two custard. Beat everything well, add vanillin and st. a spoonful of brandy and mix.
  • Impregnation. Boil water with sugar until dissolved. At the end, pour in liqueur or cognac.
  • Assembly. Cut the sponge cake in half lengthwise. Impregnate the first half. We spread 1/3 of the cream. Next is the soufflé. On top, another cream (a little less than 1/3). Soak a slice of biscuit and cover the cream with the soaked side. Top with the remains of the cream and decorate as desired. Sprinkle the top and sides with coconut.
  • Leave the cake on the table for a couple of hours, and then send it to the refrigerator.
