Cooking method

  • the process of testing the magic pot continues (officially - Instant Pot, with the family - Instapot or Pan.) ... So, all the pies are baked literally in whatever, that Instapot and I are worse than that. The recipe for this muffin is taken from Laur Pazzaglia's "hip pressure cooking" book. but I adapted it slightly.
  • Everything is outrageously simple:
  • A baking dish / bowl (mine is detachable, 18 cm), fits perfectly into Instapot: grease with oil, sprinkle with flour, then shake out the excess flour.
  • Dough: In a bowl, mix all the liquids (yoghurt, egg, butter and van (or almond) extract, if available).
  • Add sugar and mix well again.
  • Then add baking soda, baking powder and flour and mix well again. Put in the form.
  • Pour 2 cups of water (approx. 400 ml) into Instapot, put a wire rack on the bottom for steaming.
  • Put the mold with the dough inside, close the lid and put on Manual mode, high pressure, for 23 minutes.
  • After the end of the program, let it stand for another 10 minutes ("Keep warm" = warming up), then let off the remaining steam manually.
  • It looks like this:

  • Allow to cool, put on a dish.
  • Decoration: mix yoghurt and sah. powder (so that you get a rather thick smooth glaze), pour over the cake and sprinkle with almonds calcined in a dry frying pan. I don't need a lot of glaze for my taste (half, in principle, may also be enough), but completely without glaze it is not so interesting and almonds do not hold
  • Cute little cupcake, light and quick - bon appetit

Franky, Very tempting cupcake!
Tell me, can I set the temperature on the Manual program?
Franky
Mirabel, no, only pressure (high or low) and time are set on the manual program.
According to the instructions, high pressure corresponds to 0.7-0.8 bar, while the temperature reaches 115-118 degrees.
Mirabel
Franky, Clear! Thank you so much.

to your health :-) the muffin turns out to be soft, juicy and noticeably "yoghurt", to the morning coffee it is.
To make it easier to remove the mold from the bowl, you can make a wide dense tape from several layers of foil, which must first be placed under the mold, that is, directly on the grate, and leave its ends hanging freely (the main thing is that they do not touch the lid later). After finishing baking, grab these "ears" and pull out the cake pan in a second.

Franky, I look it turned out to bake !! Great Cupcake came out !!
Franky
Masinen, yeah :-) After two pancakes Cheesecakes are lumpy. True, I think that my saucepan is not to blame, it was just that the recipes were crooked.
Masinen
FrankyBy the way, we have steamed cheesecake on our forum. And the recipe is in the Headquarters section. Try to do it.

What lattice? into the bowl maybe?
Franky
Mirabel,
since it is baked, so to speak, for steam, then first a lattice is placed inside the bowl, on which the actual baking dish is then placed. And the foil construction helps to remove the hot form from the bowl, especially if the distance between the walls of the form and the bowl is small and the still hot form simply cannot be "caught" by hands with a tack. That is, put this strip on the grate, the ends stick out upward, and then lower the baking dish there, while the ends of the foil continue to stick out upward.
Am I completely confused?

here everything is painted and shown. It is very comfortable:

Franky, Now it's clearer, thanks!

Franky, a wonderful recipe, took it to the bookmarks, but did you just try to bake it in a bowl?
Franky
LenaU, haven't tried it yet. Stainless steel bowl and special. there is no baking mode.
They also advised to line the steel bowl with baking paper and bake right in it. But it is necessary to select the modes all the same.
