Ingredients

Fresh parsley with stalks

Bay leaf
Olive oil

Cooking method

  • Prepare vegetables and fish. Wash, clean.
  • Dice the potatoes, onions and celery.
  • Pour 1-2 tbsp into a saucepan. l. olive oil and fry the vegetables for 4-5 minutes.
  • Chop the garlic into slices and add to the vegetables. Fry for another 3 minutes.
  • Chop the parsley stalks (cut off the leaves) and add to the saucepan.
  • Add coarsely chopped tomatoes and bay leaves.
  • Pour water 1-2 cm above the vegetables. Salt. According to the rules, the water must be sea water. But in our conditions this is not possible. And from the seas available in our country, I would not dare to take some water.
  • Place fish in a saucepan. I had sea bass, small fish. If the fish is large, you can cut it into portions.
  • Cook the fish soup for 15-20 minutes until tender.
  • Add the juice of half a lemon and chopped parsley to the prepared soup.

Note

I saw this soup on "Jamie Oliver's Culinary Journeys". I decided to reproduce, but replacing the sea (straight from the sea) water with ordinary filtered tap water. It turned out very tasty.

There are variations of Greek fish soup with milk or cream. But we liked it anyway. Highly. Unusual with tomatoes.
