Ingredients

Wheat flour 150 grams.
Butter cold 150 grams.
Sugar 150 grams.
Ground hazelnuts 75 grams.
Ground almonds 75 grams.
Egg (1/2 for dough + 1/2 for brushing) 1 PC.
Ground cinnamon 1/2 tsp
Ground cloves pinch.
Cognac 1.5 tbsp. l
Filling:
Currant jelly 3 tbsp. l.
Raspberry jelly 1 tbsp. l.
Additionally:
Flour for rolling dough
Mold oil

  • My husband ran past, and when he saw me conjuring with a dough, he said "just not to be crumbly" (((, I first fell into a slight stupor, how is it from such a dough and not crumbly! ??? cake!
  • Then, having thought about it, I decided to try it in the form of cookies, suddenly it will not crumble so much, and they will eat my fussy)))! No sooner said than done!
  • So, everything is simple to disgrace, but nevertheless delicious!
  • Cooking the dough.
  • Sift the flour, mix with cocoa, cinnamon, sugar, cloves (I used a ready-made gingerbread mixture, it already contains cinnamon and cloves), grind the nuts in a blender, cut the butter into cubes. Put everything in a suitable bowl, add 1/2 egg and knead a dough like a shortbread. At the end of the batch, add cognac (in the original recipe - cherry / raspberry vodka). Say the dough in a ball and wrap it in a film, put it in the refrigerator, for at least 1 hour (I had a night)).

  • For filling, mix both types of jelly, if raspberries contain seeds / grains, it is better to rub it through a sieve.

  • Roll out the finished dough, dusting the table with flour, the dough is sticky. Cut out round pieces with a cup, cut out the middle in half of them.

  • We collect cookies, grease whole round pieces with an egg, on top - those with a hole, put 1 tsp inside. fillings, gently grease the top with an egg. The dough is very "harmful", it is necessary to transfer it to a baking sheet carefully so that it does not break, I transferred it with a spatula.
