Note

Purely by chance "walking" on the social network, I found my daaaaavnyaya acquaintance. She married a Georgian and went to live with him in his homeland. For a very long time communicating with her on Skype and telling each other what happened to whom, and how life changed, it came to a photo ... and my desire to visit there grew more and more exponentially.
Georgia is my old dream, I hope it will come true soon, and then "Hold me seven". I love their cuisine very much. Everything is so spicy, spicy, with lots of nuts and greens ... and "Shotis-puri" bread ... Eat mind! Well, let's not forget about Borjomi!
After finishing a long conversation, having seen enough of the Georgian beauties from her photos and videos ... I felt upset. How good it is.
And of course, I quickly ran to the kitchen to make something from what is in the fridge.
I bring this spicy and wonderful salad to your judgment.

Nadia, thanks. It really tastes good.

I'll put in my three kopecks. She has been married to a Georgian for 44 years. Mother-in-law from Racha, father-in-law from Ateni - a village near Gori. The mother-in-law's father at one time was the chef of a sanatorium somewhere near Tbilisi. I firmly know that none of the relatives and friends in Georgia eat raw cilantro. In cooking, almost everywhere, but only with heat treatment. Elo-Deida is my husband's cousin aunt, she even said that if a woman doesn't get anything from raw cilantro, then men can't eat raw cilantro at all. You can get seriously ill. All other greens are eaten not in bunches, but in armfuls.
Wild cat
Well, this is not a Georgian recipe. And just a mood cast on me.
flame, Didn't know about it. We love her very much. And we eat in the summer without stopping. I add it everywhere, like parsley.
For the winter, be sure to ice a lot.
Namely, how can you get sick?
flame
Wild catShe said that eating raw cilantro can lead to a stroke.

Wild catShe said that eating raw cilantro can lead to a stroke.
Have you confused anything ?! Can't you get raw cilantro ?!
But what about phali? Lobio?
In her youth she lived in Tbilisi, although she did not communicate with the chefs, but, with whom I know, they are still very much alive and well ...

Wild catShe said that eating raw cilantro can lead to a stroke.
Strange, the Internet is written exactly the opposite. Thanks for the information. I joke on the Internet and at my friends' doctors about this.
flame
liliya72Phali is made from boiled or stewed ingredients, cilantro greens are always put in lobio, but they are allowed along with onions. I am not claiming that this is the truth, I am simply describing what a relative told me. Cilantro greens are used in many Georgian dishes, but not raw. It seems to me that this is the only greenhouse that I have not seen to be eaten raw.
Elenka
I have lived in Tbilisi for 18 years, I never thought about it. But I have never seen cilantro really raw on the table.
By the way, on a traditional Georgian table, vegetables are not cut into a salad, but washed tomatoes, cucumbers, a large amount of greens, green onions are laid out on a large dish - all in twigs. I don't remember cilantro. Of the greens, they usually put parsley, dill, basil, tarragon, tsitsmada on the dish (I don't know the European name, I haven't met here)
I became interested in the question of harm and in almost every article there are warnings, they concern not only men but also women.
For example:
Contraindications

Do not use cilantro for pregnant and lactating women, those who have suffered a heart attack or stroke, with blood clots in the body, before bedtime.
flame
Elenka, I agree entirely. They put it always and everywhere, but not raw. Salads are also almost never made now. To my surprise, they started using mayonnaise. In my opinion, he does not go to Georgian dishes at all. All delicious vegetable dishes, fragrant with spices and primitive mayonnaise that makes all dishes almost the same. And tsitsmati, I know the name of this greenery - it's arugula. At first I wrote watercress, then I remembered arugula. This is my mother-in-law's favorite spicy herb.
Elenka
Yes, and Georgia is not the same ...
I haven't been there for a long time - more than 20 years.
OlgaGera
Maybe my first husband's relatives are not correct. True, they lived in Tbilisi, Armenians. Georgian and Armenian cuisine, everything is mixed.
But greens, including cilantro, were always raw on the table.
But what about sandwiches with herbs in pita bread? I just started eating it there, before that I could not stand the smell. And in tkemali sauce - there is raw cilantro.
The neighbor is Georgian, he cooks himself, does not trust his wife. So cilantro is the first herb to be on the table.
Tsitsmati is cressalat. I brought the seeds and planted them here. Friends call her shitty weed for its tart taste.

I haven't been there for a long time - more than 20 years.
And I was so drawn to Georgia (the last time was in 1989 of the last century) that I went in 2013 - and it turned out to be one of the best trips. The same smells, and most importantly - people! The same hospitable and hospitable, despite the big problems in the economy.
And as for mayonnaise, globalization still does something wrong with people ...
Elenka
Boiled cilantro in tkemali. This is not raw, but boiled sauce.
I don’t know of such sandwiches in Georgian cuisine.

Yes, I saw your recipe. I was taught differently. Cilantro and garlic are not cooked, due to which they retain their original aroma. Since heat treatment changes their smell

I say, not the right people of Georgia
flame
liliya72, Try to find a video in Yandex, Georgia, Racha and there is a video Paata Guliashvili sings the comic song Davdivar, you will visit Georgia again. m
liliya72
flame, went to look.
Thank you!
flame
liliya72, You can just dial Paata Guliashvili. Dvdivar and forward.
Elenka
Well, you can come up with any option for yourself and sauce and so on. The recipe for tkemali is mine and not entirely mine, I took it from a book of Georgian recipes published in Tbilisi in the 70s, recipes in 2 languages, I read and translate in Georgian tolerably. We are talking about the traditions of using cilantro, and not the private cuisine in some families.
By the way, I like to add cilantro to summer salads. But now I will be more careful with her, it turns out she is even harmful to my health. I will not refuse at all, but I will cut it down.
I want to apologize to the author of the recipe for the discussion. I am grateful to you for the information that accidentally surfaced. In general, cilantro also smells of Georgia to me.
OlgaGera
Elenkahow much cilantro do you need to eat to seriously harm?
The body will tell you whether it needs it or not.
If you want, then eat, do not use kilograms
Listen to yourself and everything will be fine.
Want / like it means you need it.
And the traditions of use are different. Adopted over the years / centuries, but differ
And try the sandwich
On a twig or two, put any greens in pita bread, in a "pocket", and there crumble a whisper of sheep's cheese ..... Wine / beer at will, you can just eat
Elenka
Thanks for the recipe. I eat cheese like that, but with vegetables.
I can eat a lot of cilantro, but now I will limit it.
OlgaGera
In a sandwich, sheep's cheese, rather, plays the role of salt. And gives piquancy.
If there is no cheese. That can be done without cheese - just greens.
And with kharcho how delicious ...
Wild cat
Lena, nothing wrong. After all, this is one of the ingredients of the salad, and I love it sooo much. So it was a very useful discussion!

I talked about this with a doctor. His eyes were big. He said, this is how much you need to eat in order to harm your health.
The only thing in limited quantities for pregnant and lactating mothers. So many people hear about it for the first time. There is no information on this in the internet. Everywhere they write that it is useful like other greens.

tana33, definitely cooking. You will definitely like it.

I asked my former business partner, Mengrel. He replied: “Stupidity and nonsense! In a salad of tomatoes and cucumbers, a sea of raw cilantro. All Georgia eats every day. "
When I was there, I also saw cilantro, they ate right along with other herbs. But I haven't seen dill.
They peel cucumbers in a salad, by the way.
