Ingredients

Wheat flour 580 g
Kefir 250 g
Warm water 50 g
Butter (margarine) 50 g
Eggs category C0 2 pcs (about 100 g per dough)
Pressed yeast 20 g (dry about 7 g)
Sugar 70 g
Salt 1/2 tsp

Cooking method

  • It is better to take the ingredients for the dough out of the refrigerator in advance so that they reach room temperature.
  • In warm (below 60 degrees) water, dissolve sugar, salt, crumbling yeast, let it go.
  • Break 2 eggs into a cup, beat lightly. We need about 100 g. If the eggs are large, pour some of them for lubrication. If small, you can add water.
  • Add eggs to the resulting mixture, pour in kefir, put your favorite spices, mix well.
  • Sift the flour and start kneading the dough.
  • The consistency of the dough is quite thick, since it can later be used for rolling out, but you do not need to clog it with flour. Remember that after rising, the flour swells and the dough becomes thicker and denser.
  • Cut the butter or margarine into small pieces, sprinkle with a little flour and lay on top of the dough.
  • Cover the bowl with the dough with a foil or a thick towel and put it in a warm place for lifting.
  • When the dough has increased by about 2 times, mix the butter and put it on the second rise. This time, my dough has grown three times.
  • The dough is ready!
  • It has an excellent silky consistency, does not stick at all, but at the same time it is not harsh.
  • You can make pies, pies, rolls, roll thinly for rolls and bagels, etc.

I usually put the molded and spaced products in a preheated oven, but I have a quick warm-up, so now I sometimes experiment with a cold one.
And I set the temperature to 180 degrees, sometimes to 200 I bake small rolls, which are baked quickly, but do not have time to fry.
To be honest, I never checked yeast baked goods with a toothpick. Only by pressing on the crust, it should spring, but experience is needed here ...
I'm also guided by the smell. Ready-made pies and rolls smell different ... I don't know how to explain
