There is already a recipe for Bulgarian Easter cake in this section, but I bake with sourdough, so I am writing my own recipe. Bulgarians only bake such a kozunak for Easter, braided wicker without glaze.

Bulgarian kozunak with sourdough

Ingredients

150 ml milk
2 eggs
50 ml sunflower oil
40 g butter
150 g sugar
200 g sourdough
450 - 500 gr flour
zest of one lemon
vanillin

Preparation

Warm milk, mix with sourdough and some flour. Put in a warm place.
After three hours, the dough came up.

Bulgarian kozunak with sourdough

Add the rest of the ingredients and knead the dough. Make braids from the finished dough, greasing the dough and hands with butter and leave in a warm place for fermentation.

When the braids have doubled in volume, brush with yolk and sprinkle with sugar.

Bake in the oven, 180 g, about 40-50 minutes.
