Note

I found this recipe in Olga Baklanova's blog "All Salt", where it is called "Sauce for fish from the miller's wife." In my opinion, this name is not very correct, since the Meniere sauce is prepared in a completely different way. To prepare it, you need to boil the butter over low heat until it turns brown. Add finely chopped parsley and lemon juice. The ingredients are the same, but the technique is different. But the method of cooking fish is called meuniere, that is, from the miller's wife. While the miller grinds flour, his wife cooks with flour. When she fries fish, she rolls it in flour before tossing it into the pan.
Overall, the dish is excellent. We must pay tribute to the French, here really all the power of the dish is in the sauce, which goes well with fish and makes a seemingly simple dish deliciously delicious.

A wonderful fish, and I love cod, but it's hard to find a good fresh one! I will definitely do it!

And also add the leaves and flowers of nasturtium to the oil, mmmm .... But this will be refined in the summer.

Rada-dms, Thank you so much! Yes, good cod, especially now, is very difficult to find, we go to the base for fish, and I don’t even look at it in the market or in the store.

julia007, Julia, thanks for the simple and delicious recipe!
We also love fish, but you won't find a good happy day with fire, but with red it won't work?

And for the oil - a separate merci, probably with boiled potatoes!

Trishka, Ksyusha, To your health! I think that it will be good with red too, just the French have cod in a greater move. You can also use butter with potatoes, and you can also experiment with different herbs (dill, cilantro).
