Cooking method

  • Free the heart and meat from films, cover with water and boil for 5 minutes. Drain the water, add new water, put onion (cut) into 4 parts, peppercorns, juniper (crumble by hand), cloves, parsley root. Bring to a boil and simmer over low heat for about an hour. DO NOT DRAIN! Then leave to cool under the lid. It is convenient to do this in the evening. With this method of cooking, the meat is aromatic and juicy.
  • Remove the film from the heart. I forgot to weigh the raw meat, so I indicated the weight after cooking.
