Potato profiteroles

Ingredients

Mashed potatoes 50 grams
Potato broth 85 grams
wheat flour / grade 80 gram
salt pinch
lard 15 grams
margarine (butter) 35 grams
egg 2 pieces

Cooking method

  • Boil potatoes in water, do not salt.
  • Get it. Mash in mashed potatoes.
  • Mix with potato broth.
  • Add fat and a pinch of salt.
  • Sift flour.
  • Bring the broth to a boil and completely dissolve the fat.
  • Add flour and mix well so that there are no lumps.
  • Turn off.
  • Let the dough cool until warm.
  • Beat in an egg and mix until smooth (I do this with a mixer).
  • We drive in the second egg when the first is completely connected to the dough.
  • The dough is done when it is smooth, viscous and smooth.
  • Place it on a baking sheet covered with paper or a rug with a nozzle or spoon.
  • I baked at 200 degrees for 20 minutes, then lowered the temperature to 160 and baked for another 20 minutes.
  • I did this so that there was a good crust and the inside was not very humid.
  • We take it out, let it cool and fill it at our discretion.

Incredibly fluffy profiteroles. The idea to cook was spied on the Internet. But everywhere I came across a completely different technology. Everywhere they brew the dough, as usual in water, and then stir in mashed potatoes. I didn't like the photos of such profiteroles. I decided to experiment while adding lard. I'm happy with the experiment. Try it. You will not regret! Recommend!
