Old world pies with buckwheat, sauerkraut and mushrooms

Ingredients

flour 3 st
dry yeast 5 g
cabbage pickle 250 ml
vegetable oil 3 tbsp. l
vodka 2 tbsp. l.
sugar 2 tsp
For filling
buckwheat 0.5 st
bulb onions 1 PC
sour cabbage 250 g
dry porcini mushrooms 30 g
salt, sugar taste
vegetable oil for frying

Cooking method

  • Soak the mushrooms.
  • Boil thick buckwheat porridge, adding mushrooms to the cereal with water, in which they were soaked.
  • Using a planetary mixer or bread machine, knead the dough until it sticks off the walls.
  • The dough should be soft, tender, but plastic.
  • Let the dough stand for about an hour.
  • In the meantime, fry the onions.
  • Add cabbage, if it is dry, add a little water and sprinkle with sugar a little (if the cabbage is very sour, it must be rinsed first). Simmer until soft.
  • Add buckwheat with mushrooms to the finished cabbage, pepper, salt if needed, and stew everything together a little more.
  • Divide the dough into lumps the size of a small egg.
  • Flatten it thinly and stretch it on the silicone surface.
  • Put the filling in the center (about a heaped tablespoon) and fasten the ends to make a pie. Lay it seam side down and gently flatten it.
  • Heat vegetable oil in a frying pan (half a centimeter layer of oil).
  • Fry the pies on both sides until tender, at least 3 minutes on each side.
  • Put the finished pies on a paper towel.
