Orange jam ½ cup (2-3 tablespoons)

Cooking method

  • Ingredients:

  • Since corn flour and quinoa are gluten free and do not bind well in the dough, for this purpose I added flaxseed branwhich bind the dough and liquid inside very well. I took the bran, they are light in color and practically will not change the color of the finished pancakes. Flaxseed flour can be used, but it is very dark in color. Or grind flax seeds yourself.
  • Add all the ingredients (except the baking powder) to a bowl, mix until smooth. Continuously monitor the consistency of the pancake dough by adding liquid.

  • At the last moment, add a baking powder to the dough, mix until smooth.

The taste of quinoa is absolutely neutral, there is nothing to compare with.Therefore, I like cereals, which are neutral in taste, and there are a lot of benefits from it, and the replacement of flour is excellent
When I tried it for the first time, in a boiled form, I also did not understand the taste and did not like it - then I began to get used to it and now I add it wherever possible
I myself am surprised that I didn't seem to add anything like that to the dough, and the pancakes are tall and fluffy inside. The taste is more in the direction of corn, but weak.

There are plans to further adapt this composition of ingredients for other baked goods.
