Breadsticks (Olive Garden Breadsticks)

Ingredients

Chatterbox:
Wheat flour 200 g
Dry yeast (Saf-moment) 6 g
Warm water 380 g
Dough:
Chatterbox all
Wheat flour 400 g
Softened butter 40 g
Sugar 2 tbsp. l.
Salt 1 tbsp. l.
Topping:
Vegetable oil 3 tbsp. l.
Salt 1/2 tsp
Oregano 1/2 tsp

Cooking method

  • For a chatterbox, beat all the ingredients and leave for 15 minutes.
  • For dough, mix all ingredients. Knead a soft dough. I kneaded in Thermomix. 7 minutes, Spikelet mode.
  • Round the dough and leave for 30 minutes. Then knead, round again and leave for 60 minutes.
  • Then knead the dough again, shape the sticks. Luda uses a screw juicer for this. I put it through the sausage attachment Meat grinders CASO FW 2000
  • Put the workpieces on a baking sheet covered with paper, at a sufficient distance from each other. Cover and leave for 30 minutes.
  • Prepare topping. Pass the garlic through a press. Mix all ingredients. Brush the blanks with topping.
  • Bake in preheated to 220C until golden brown. The exact time depends on your oven. I have 20 minutes.

Everything settled perfectly. The only thing at the end of course was the last dough to be picked out and molded by hand.
