Beetroot sorbet in Caso SJW 400 auger juicer

Ingredients

Beet 500 g
Balsamic vinegar dark 2 tbsp. l.
Peppercorns of different colors 1 tsp
Salt taste
Green salad, green onions, sour cream for serving

Cooking method

  • Boil or bake beets in any way you can (in the oven or microwave). Cut into small cubes and freeze. Remove the beets from the freezer 5 minutes before cooking.
  • Heat the pepper in a microwave for about 1 minute, crush in a mortar so that large pieces remain.
  • Place the sorbet attachment in the juicer. For the finished sorbet, place the container under the cake hole.
  • Load half of the beets into the feed tray. Turn on the juicer. And immediately pour in a tablespoon of vinegar, add half the pepper, lightly salt. Repeat with the remaining products.
  • To serve, line the portioned containers with lettuce leaves, put the beet sorbet balls. Garnish with sour cream, green onions, sprinkle with the remains of ground pepper.

If you don't have such a wonderful juicer, then sorbet can be made too. After the baked or boiled beets are cold, grind them with a blender with the addition of vinegar, salt and pepper. Place in a tray and place in the freezer. After an hour, remove, whisk and put in the freezer again until tender. Or use an ice cream maker if you have one.
Such a sorbet is good in itself as an appetizer, especially in hot weather. It will go well with boiled potatoes with meat. And it will sound very good with salted herring or sprat. But in this case, instead of sour cream, it is better to take horseradish. If you plan to feed your kids beetroot sorbet, avoid peppers. And for adults, vinegar can be replaced with dry white wine.
