I bake everything I can in ghee. I counted it with a coefficient of 0.8. I put in about 200 ml. Knead in HP. It mixed perfectly, but the dough turned out to be soft. In the oven, the cookies rose orderly, and then settled. Next time I will knead with my hands to control the consistency of the dough. If necessary, I will finish it with flour.
And one more remark. It so happened that some of the cookies were rolled in fine sugar, and some in large. I liked the larger ones - the crunchier ones.
