Spicy Red Lentil, Pumpkin and Red Pepper Soup (Steba DD2)

Ingredients

Red lentils 1-1.2 m. St.
Peeled pumpkin 300 g
Potatoes medium 2 pcs.
Large red pepper 0,5
Onions and carrots 1 pc.
Celery root (if available) 50 g
Tomato paste (mashed tomatoes or juice) 1 tbsp. l. (2/3 st.)
Hmeli-suneli 2/3 tsp
Roots or stems from greens bunch
Ground pepper, turmeric, paprika, dried garlic, cinnamon taste
Carnation 2 buds
Allspice 5 pieces.
Bay leaf 1 PC.
Garlic 2 cloves
Sugar pinch (to taste)
Water about 2 l
Greens and lemon for serving
Bacon (slices) by the number of eaters
Vegetable oil 2 tbsp. l.

Cooking method

  • Here's a delicious lean soup that's easy to turn into a quick one by adding a slice of crisp-fried bacon to each plate, which I do for non-fasting family members.
  • Of course, you can cook it in broth, then preferably in lamb,
  • or add smoked pork rib.
  • But in the lean version, the soup turns out to be very tasty, and we compensate for the absence of meat additives with a large amount of spices.
  • I used to cook such a soup with peas, but as soon as lentils appeared in stores at the dawn of the 90s, I replaced peas with this product, which is more useful and easier for the stomach.
  • Sometimes I turn this soup into a puree soup for my mother.
  • - Finely chop the onion and carrots and sauté in oil on the "Fry" mode without a lid until golden brown, stirring occasionally. At the end of frying add finely chopped red pepper and stir.
  • - We wash the lentils with cold water and put them in a saucepan.
  • - Grate pumpkin and root celery, cut potatoes into strips or cubes. Add pressure cooker to the pot.
  • - Dilute the tomato paste a little with water, add to the saucepan. Instead of tomato paste, you can (even better) add 2/3 cup pureed tomatoes or tomato juice.
  • - Finely chop the garlic and herbs, add all the spices. If the pumpkin is completely unsweetened, then add a pinch of sugar in order to balance the acidity of the tomato component.
  • Spicy Red Lentil, Pumpkin and Red Pepper Soup (Steba DD2)
  • - Pour boiling water into a saucepan, salt and cook at a pressure of 0.3 for 10 minutes. If you like completely boiled lentils, then add a couple more minutes of cooking or cook at a pressure of 0.7. After 5-10 minutes, drain off the remaining steam and open the lid.
  • Serve with herbs. And my son loves to eat this soup with a slice of lemon.
  • I really like to add slices of fried bacon with fat to this soup.

Note

Why is this soup good? And he is like a magic wand! If we subtract water and add fried meat, we get a delicious second dish with an oriental touch.
And it also masks the pumpkin so well that all non-lovers eat this soup without problems.
