Light ice cream with black currant on agar-agar (Brand 3812 ice cream maker)

Ingredients

black currant (frozen) 350 g
coconut milk 400 g
sugar 150 g
water 150 g
agar-agar 1 tsp

Cooking method

  • Pour boiling water over black currants and leave for 1 minute.
  • Drain the water. Puree the berries and rub through a sieve.
  • Combine water and sugar in a saucepan. Heat to dissolve sugar. Add agar-agar, bring syrup to a boil and simmer for about a minute.
  • Cool slightly, combine with berry puree and coconut milk (for me, Blue Dragon).
  • Pour the mixture into an ice cream maker and freeze.
  • Bon Appetit!
