Ingredients

Pork (ham) 1,050 kg
Nitrite salt 20gr
Spices for meat 1-1.5 tsp
Table salt 1 tsp
Water 0.5-1 l.

Cooking method

  • I bought a piece of meat, a leg part .. wanted to make ham ... but decided to make it in one piece ..
  • I pierced the meat well ... from all sides, I didn’t find it at first, and then I took a thermometer from Teskoma and poked it ... tried it on Teskomu how it would enter ... put it in a container, filled it with water to see how much water was needed. .. I pulled out the meat, put salt, spices there .. you can also add simple salt (I did not add), so that it was a little saltier .... interfered, and again the meat there ... closed the lid, put it in a large vacuum bag and vacuumized ... marino It took a day .. but I think it could be more ... then I took it out of the bag and put it in Tekomu ... I cooked it in the same way as the ham, at 70g for 4 hours from a warm state (filled it with hot water from the tap) in Stebe .. ..

I made it for the first time in Tescom - at first I kept it in a marinade (500 g of pork ham + 200 ml of water + 10 g of nitrite salt + 10 g of salt + pepper) in a vacuum container in the refrigerator for 1.5 days (it was necessary would have been longer, but I really couldn't wait to see how it would turn out), then cooked for 4 hours at exactly 75 degrees ... it turned out to be excellent both in color and taste ... a little salty, but I like it so much ... again thank you very much!..
