Chicken roll Half chicken

Ingredients

Broiler chicken whole 1 piece (but only half will be used)
Butter 30 grams
Dill, parsley 1 tbsp. l.
Salt, black pepper Taste
Ground coriander pinch
Garlic 1 clove
Sweet red paprika

Cooking method

  • Wash and dry the chicken well.
  • Carefully separate the skin from the meat on the breast and both legs. This can be done with a tablespoon.
  • Use scissors to cut off the skin from the breast, as close as possible to the wings, and from the legs. You should get a flap that is not quite the correct shape.
  • Set aside the skin for now.
  • Separate the fillets from half the breast and one leg. Put the rest of the chicken on another dish.
  • Cut the fillet and open it like a book, 1 cm thick.
  • Season the meat with salt and pepper, season with a pinch of coriander.
  • Chop the greens (what is). Pass the garlic through a press.
  • Mix the softened butter with herbs and garlic.
  • Spread the prepared meat on the skin, spread with butter and roll up in a tight roll.
  • Pull off with large gauge thread or forming mesh.
  • Sprinkle with sweet paprika on top.
  • Put the roll in a suitable form or simply on foil and bake in the oven (or airfryer) at 180 * C until the temperature inside the roll is 90 * C.

Note

Why not use both breast halves, you ask?
But if one of your family members is more fond of dark meat, then it is better to do as I do, take one share of breast and one leg. So everyone manages to please. If there is no fussy, then you can use the whole breast.
