Cooking method

I am not from your "sect", but the problem of a beautiful borscht has not been solved until recently. I don't really like the sausage. Therefore, she was perverted in every possible way - she boiled beets for steam, cooked separately and rubbed boiled in borscht, ... I did different things, I don't remember everything. For me it is doubly elegant. Because often I eat the first one. Cooking borscht for 250 ml of broth is a big cartoon, and for several days there is one and the same thing, I already turn my nose. The same method makes it possible to dine with cabbage soup. and the next day transform them into borscht.

And yesterday I also suddenly modernized this recipe. Marinated the beets not in vinegar, but in red currant juice.
I don’t know how it fits into the principles of "sybarite", but the color and taste turned out to be unrealistically bright

Irina, it fits together normally, there the trick is not in the method of pickling (it is only for preservation - so any acidic environment), but in using raw beets instead of boiled ones.
