Wheat bread with coconut meal

Ingredients

active wheat sourdough 100% moisture 200 grams
water 200-210 grams
wheat flour / grade 310 gram
coconut meal (flour) 50 grams
maltodextrin (sugar, molasses, honey) 10 grams
pressed yeast 3 grams
salt 8.5 grams

Cooking method

  • Feed the sourdough 5-8 hours the day before.
  • Dissolve yeast in water.
  • Mix flour with meal and maltodextrin. If you put molasses, honey or sugar, then dilute them in water along with yeast.
  • Pour water into the leaven, add flour and knead.
  • Add salt after 10 minutes.
  • The total kneading time with a hook is 15 minutes.

  • Stretch-fold the dough and ferment. Fermentation for 105 minutes. Stretch-fold once after 45 minutes.

  • Proofing in basket, seam side up, 60 minutes.

  • Remove the cap, lower the temperature to 180 degrees and bake until cooked for another 15-20 minutes.

Jeanne, you need to try how the milk will behave. At first, when I baked for the first time, I put 20 grams of coconut oil. I obviously didn't like the result. The dough here is already unusual in structure, but with butter, finally ... The bread was spread out, low. Not beautiful and I didn't like the crumb structure. And the taste was clearly coconut. Milk can play that way too. This oil is also present there.
