Ingredients

Dandelion leaves

Cooking method

  • This is a real spring treat.
  • I usually buy dandelion leaves. In France, they hit the shelves in March-April under the name PISSENLIT.
  • But one day, I went for a walk in the garden and picked fresh dandelion leaves) and made a salad of them !!! Delicious !!!
  • The main thing is to tear the leaves to flowers, after which they become bitter.
  • First, rinse the dandelion leaves well.
  • Chop them finely and season them as you like. I make with olive oil, wine vinegar, salt and pepper.
  • Then we prepare the croutons. You can use store-bought ones (preferably with garlic flavor) or cook yourself.
  • I cook myself.
  • I cut white bread into cubes and put it in the microwave for a few minutes (about 2). You can pre-grease the bread with garlic, sprinkle with oil, etc., as you like.
  • EVERYTHING TO YOUR TASTE !!!
  • After that, fry the bacon in a frying pan, add finely chopped garlic, and pour in the croutons. We fry everything together so that the croutons absorb the juice and the smell of bacon and garlic, and pour hot into the salad. Stir lightly.
  • We serve immediately! Warm it tastes better)

Dandelion is a wild perennial herb up to 30 cm high with a fusiform thick fleshy root, leafless flowering stem, rosette of notched-pinnately dissected leaves and golden-yellow flower baskets. Grows in meadows, meadows, wastelands, near roads, in forests, parks, vegetable gardens; grows from April to October. Young leaves are eaten (harvested before the flower arrows appear), in which up to 1.9% of protein, there are vitamins carotene (6.4 mg%), groups B, C, (22 mg%), salts of iron, cobalt, phosphorus , calcium, aluminum, manganese.

Dandelions are eaten fresh as a salad, boiled as spinach. To remove the bitterness, the leaves are placed in salt water for 30 minutes. The salad is prepared in a mixture with other vegetables or separately. When using the vinegar-mustard dressing, the bitterness in the salad is almost not felt. Pickled dandelion buds are substituted for capers. They are added to hodgepodge, vinaigrette. Flowers can be put in milk soups and as a seasoning in salads and cottage cheese. Jam is made from the flowers (it has a peculiar taste and smell), and a "coffee" drink is prepared from the fried dandelion roots (a thick black infusion with a pleasant taste and smell). Young leaves are harvested from early spring to late autumn, flowers - in May - June. The roots are dug up in early spring (before the beginning of the growing season) and in autumn (during the wilting of the leaves, August - September). They are washed, cut into pieces, dried and crushed (stored in a sealed container).
