Whole wheat-rye bread with chocolate

Ingredients

Dough:
Warm water 150 ml.
Sugar 1 tsp
Wheat flour, premium 100 g
Dry yeast 0.5 tsp
Dough:
Opara all
Warm milk 150 ml. (+ 30 ml.)
Honey 1 tsp
Salt 1 tsp
Vegetable oil 1 tbsp. l
Bitter chocolate 20-30 gr.
Rye flour c / z 200 gr.
Wheat flour c / 3 100 g
Wheat flour, premium 50 gr.
Dry yeast 1 tsp

Cooking method

  • For dough, mix all the ingredients, put in a warm place until doubled.
  • Whole wheat-rye bread with chocolate
  • Chop the chocolate finely (I melted it in the microwave, but it's better to chop it into pieces anyway). Put all the ingredients in a bucket of a bread machine according to the instructions.

  • Turn on the kneading of any program for 10 minutes, as soon as the dough gathers in a bun, turn off the kneading (you may have to add water during kneading, I added 30 ml). Leave the dough for 10 minutes, then turn on the kneading again for 10 minutes. Transfer the dough to a bowl greased with vegetable oil

  • Put in a warm place for fermentation until it triples (knead the dough in the middle of fermentation). It took me 2.5 hours

  • Knead the dough, form a blank

  • Place in a warm place for proofing until the workpiece is 3 times larger
  • Whole wheat-rye bread with chocolate
  • Bake in an oven preheated to 220 degrees for the first 10 minutes with steam. Then release the steam, lower the temperature to 180 degrees and bake until tender (it took me 35 minutes)

Note

The recipe was found on Povarenka (unfortunately I don't remember the author) and was slightly adjusted for myself. I strongly recommend chopping the chocolate, otherwise it is lost in the bread

How interesting. I always found bread completely made from CH flour sweet. And then chocolate should enhance this feeling. This is probably a variant of dessert bread?
