Ingredients

wheat flour 2 tbsp.
frozen butter (margarine) 200 gr.
cold kefir 1 tbsp.
egg (only 1 yolk can be put in the dough) 1 PC.
salt pinch
glass volume 250 ml

Cooking method

  • This is a wonderful dough. Cooking it is elementary and quick, about 10 minutes, and the result is incredible, soft and at the same time crispy, layered and tasty. You don't need to layer anything, you don't need a lot of movement. I just mixed everything one by one and sent it to the refrigerator.
  • If you're going to cook something over the course of a few days, it'll keep great in the bag in the refrigerator.
  • If you are cooking for future use, then you can send it to the freezer.
  • Another plus is that the ingredients are approximate: we perfectly replace sour cream with kefir or yogurt, add flour if it sticks a little to our hands. We also use any fat or combine it, you can take margarine, butter, lard, whatever. It rolls out very easily as the dough is soft and elastic.
  • You can bake with or without filling.
  • By the way, this dough is also suitable for Napoleon.
  • Rub frozen butter (margarine) into flour, mix quickly with a fork, without achieving uniformity.
  • Add the remaining ingredients to the butter-flour mixture and stir again with a fork.
  • Now we knead on the table until all the flour is absorbed (flour may be added), put it in the refrigerator for at least 4 hours, or overnight. This dough can be prepared for future use by sending it to the freezer.

  • After taking it out of the refrigerator, spread the dough with a rolling pin, fold in the usual way into an envelope. Cut the required piece from the folded dough and roll it out for the product.
  • There is no need to do addition - rolling, addition - rolling, etc.
  • Lamination is obtained from the fact that we three butter and do not thoroughly combine flour with butter, but simply mix. During the baking process, these pieces of butter melt leaving space.

I baked curls: after rolling out the dough, I smeared it with melted butter, and then just sprinkled it with sugar.
I sculpted pies with filling cottage cheese + garlic + cilantro + salt. It was delicious, but the filling ran out of the pies twice, apparently it did not blindly well.
You can just bake the sugar-coated cookies just like the curls.
