Ingredients

flour 1.5 tea cups
sugar 3/4 teacup
orange juice (freshly squeezed) 1 teacup
sunflower (corn oil) 1/3 teacup
orange zest 1 PC
soda 1 tsp
vinegar 1 tbsp. l.
raisins, nuts optional

Cooking method

  • I live in Greece, and here they are strict about faith and fasting, so I often have to cook meatless dishes. Once I came across a recipe according to which my mother-in-law often prepares an orange muffin. The cake turns out to be juicy, very tasty, aromatic and does not stale for a long time. You will want to indulge in them over and over again, not even in fasting.
  • The recipe is very simple, I added raisins and nuts to it, it turns out even tastier. In Greece this pastry is called portokali nistisimo cake, and in Russian it is called lean orange cake.
  • So, to make a cupcake you need:
  • Mix the butter, sugar, orange juice, vinegar and zest well. Add sifted flour, baking soda, a pinch of salt and mix everything together again. If you want, now you can add fried nuts or raisins. We mix.
  • Grease the cake pan with butter and sprinkle with flour. Fill in the dough. We bake in an oven preheated to 170C for 45-60 minutes (see your oven). Check readiness with a toothpick or any thin wooden stick.
  • Try to wait until ready, the aroma will be amazing at home.
  • In the photo, the muffin is a little overdried, the bottom turned out to be darker, but this did not affect the taste.

A very handy recipe for when there are no eggs in the house! In my cut, it turned out to be two-layer, because I laid it out in a mold, first with a high content of juice, then with less. Only the question arose about the crust, should it be on top?

I still have sourness in the finished biscuit. I think we need to follow. times or exclude vinegar from the recipe, or add more soda.

I took more oranges and pressed the juice into the largest mug I could find in the kitchen. It took 4 oranges. Then I measured the rest of the products with this mug. The dough came in 2 forms.
It turned out fragrant and tasty! I will definitely repeat!
