Pancakes ... It would seem - what is easier. But the simplest, as always, the most delicious. My kids can eat pancakes endlessly. The main thing is to have time to deliver sour cream in cisterns. We have pancakes on weekends. Regardless of the carnival. And on Shrovetide we have pancakes regardless of the weekend. My big problem in making pancakes is that this is not a single dish, and therefore it is simply unrealistic to drive home from the plate with ready-made ones. If I hadn't deported them from the kitchen, they would have gorged themselves in time for the end of their baking. Children steal pancakes (and they are huge for me) and mercilessly tear them into "rags", relishingly putting the torn off "strips" in their mouths. If someone gape inadvertently, the faithful dog does not sleep. Plucks straight out of the hands and swallows without chewing. When it comes to pancakes, it's every man for himself.

These are my versatile pancakes. For many years now. I laid them out here somewhere. In this version or not - I don't remember. After the appearance in the house of such a tame animal as sourdough, I began to add it for savory options. I vary this dough only depending on the filling or its absence. The basis is always the same. These ones - with unsweetened filling such as ham, salmon / trout, meat, cheese and just eating without everything or with sour cream. When the pancakes are supposed to be sweet or the filling is sweet, of course, we exclude the onions, add vanilla sugar and go ahead - the rest is the same.

Now the variations are all on the same theme. The basis is the same. In the photo, by the way, a pizza plate. The size of the pancakes is appropriate.

Pancakes For all occasions

1. Pancakes "For all occasions" for any filling Mostly sweet options for fillings, since for non-sweet ones I use the recipe described in the first post.

350g flour (2 cups with a small hill)
3 glasses of liquid (2 glasses of milk + 1 glass of water). Only on milk pancakes burn more strongly, only on water - less tasty.
1 egg
100g starter culture (if any)
a pinch of salt
2 tbsp. l. Sahara
slightly less than half a glass of melted butter (better - Guy oils, i.e. good ghee) into the dough

These are wonderful pancakes with filling. They are almost not spongy, but thin, homogeneous, "rubbery" and uniform golden color ...
2. Pancakes "For all occasions" sweet

350g flour (2 cups with a small hill)
3 glasses of liquid (2 glasses of milk + 1 glass of water). Only on milk pancakes burn more strongly, only on water - less tasty.
1 egg
100g starter culture (if any)
a pinch of salt
1 st. l. sugar in dough and sugar for sprinkling separately
vanilla sugar
4 tbsp. l. vegetable oil for elasticity and non-burning

slightly less than half a glass of melted butter (better - Guy oils, i.e. good ghee) - not in the dough !!! This is a smear !!!
When you have made the dough, let it stand for 30 minutes. During this time, the flour will actively absorb water, the gluten will swell and the pancakes will be stronger.

Mine are very fond of eating this particular sweet version of pancakes, without filling. Namely: when I am going to make them with butter, I do not add butter to the dough itself. I increase it to 3-4 tablespoons of vegetable (so as not to burn, before the first pancake, you can slightly grease the pan with oil, give a greasy shine).When frying, they turn out to be rather dry (breaking ends and crust), do not be alarmed - they will become soft, as it should be ...

Put the fried pancake on a plate, pour the next one into the pan, and in the meantime pour two teaspoons of melted butter onto the fried one (I use a silicone brush to spread the pies), smear it a little all over the pancake, sprinkle it evenly with 1.5-2 teaspoons on top sugar (who loves how sweet). Put the next fried pancake on top and repeat the procedure. And so you put the whole stack ... Then, before serving the whole stack, turn the other way around and the very first pancake will turn out to be the topmost. The pancakes will already be completely soft, and the sugar between them dissolves completely. They turn it over precisely because those pancakes that were made at first are the most saturated and you need to start bursting with them ... And, by the way, they do the same before wrapping the filling (if you make pancakes with filling). The bottom pancakes are already "baked" and completely soft, and you need to start wrapping them with them. Until you reach the last one, they will become the same.

And they go perfectly with tea or milk ... You can do it with sour cream, but then it's better to make 2 teaspoons of sugar for a pancake.

And I highly recommend making ghee. It makes pancakes incredibly fragrant. It is worth trying once and you will understand what its beauty is.

No, if there is no leaven, yeast is not needed at all. These are NON-yeast pancakes. The sourdough in this recipe does not have time to ferment and bubble the dough during this time. She here plays the role of simply a carrier of a wonderful smell in the finished product and an ingredient that increases perforation. Therefore, if it leavens, nothing terrible will happen at all. Delicious pancakes will turn out.

I also strongly advise you to make a sweet version, where pancakes are poured with melted butter and wake up with sugar, stacked. Fall in love, I promise. My children just love them. I immediately remember my childhood. We ate the same way. Only my mother didn't grease the pancakes, we just melted the butter, dipped the edge of the finished pancake into it, then in sugar and ate it. It is something!)))

Ghee butter (aka ghee) - into the dough. Its amount in the dough is greatly reduced only when sweet pancakes are prepared with pouring melted butter. Because with butter it will be too much. And in all other options - butter in the dough in the amount specified in the recipe.

Today I did it again. This is in my family - a hit of all times and peoples. Simple, uncomplicated in composition, but these are awesomely delicious pancakes. Moreover, they can go with unsweetened fillings: just spill the pancakes with melted butter and DO NOT sprinkle with sugar). Personally, I can't choose between the green onion beer pancakes and these. And for children, the answer is unequivocal))).

I'm putting more eggs now. Just because the eggs are homemade, from their chickens and somehow - why not put it)). I just reduce the liquid a little.
