Tamarind * (paste) 1/4 cup

I really like to add different sauces to dishes. Worcester sauce is no exception. I was interested in what the sauce is made of. You can buy it, but you can also make it. Digging around on the Internet, I found Worcester sauce from Hector Jimenez-Bravo, looking decided to do it. And really, at home, it turns out no worse. And so is the preparation itself.
Chop the onion and soak in a solution: 2 glasses of water and 2 tablespoons of vinegar. We marinate for 30 minutes.
Chop the garlic.
Put mustard seeds, red and black peppers, cinnamon, ginger, cardamom, cloves, garlic and onions in several layers of gauze (or in a nylon bag). Tie up in a bag, put in a saucepan and add soy sauce, vinegar, sugar, water, tamarind *, put on fire. Mix well. Bring to a boil and boil for 30 minutes over low heat.
Then add curry, chopped anchovies, 2 tablespoons of water, salt. Boil for 1-2 minutes.
Let it cool. Pour into a glass jar, put a bag of spices there. Close with a lid. We store in the refrigerator, every day we squeeze the bag and mix thoroughly, After a week or two we take out the bag. Pour the sauce into a bottle and use. Store in the refrigerator.
* If you don’t find tamarind, it’s okay, you can replace the lemon juice (along with the pulp), grind it with 2-3 tablespoons of sugar or honey.
* If you do not find anchovies, you can substitute hamsa or sprat.
Cook and have fun.

Once I also wanted to do home cooking of Worcester sauce, but after reading the recipe (more than 30 components), close to the original, and the process of its preparation, I realized that what I would cook would be the same Worcester sauce as Tobasco sauce from chopped at home in a meat grinder chili peppers, drenched in vinegar.
Not mine: Ready-made sauces are definitely evil, there is no doubt about that. Mayonnaise, tartar, ketchup can be made at home, and it will be healthier and tastier. But there are some sauces that can be industrially prepared not only possible, but at least justified - such as soy, fish, oyster sauces or Worcester sauce.

If possible, get Lea & Perrins Real Worcestershire Sauce, made in the UK.

In our Ukraine, in the Selpo supermarkets, it is now relatively inexpensive - less than US $ 3 for a 150 ml bottle. All the rest are sauces - good or bad, but only variations on the theme of Worcestershire sauce ...

I also love this sauce very much, in my kitchen it is not translated. But I was surprised by replacing tamarind with lemon juice with honey. The taste will change a lot. I will not say that it will worsen, but it will be far from the original, since the taste of tamarind is very far from lemon. If you eat it with your eyes closed, then it is a date. Only the pulp between the shell and the bone is much less than in the date.

Borrowed Buy only the classic Lee & Parris sauce that goes under the brand name of heinz Worcester sauce. But you shouldn't confuse it with jars that don't have Lee and Parris labels, but just Worcestershire Heinz sauce. It has nothing to do with the original.

I can only share my opinion that the worst Worcestershire sauces are Chinese ones made on the basis of soy sauce. In the original recipe, soy sauce is absent, and the color and smell are achieved by the various components of the composition. Homemade - why not ...
