Potato braids with spicy herbs

Ingredients

Raw peeled potatoes 350 gr.
Water 50 ml.
Yogurt 50 ml.
Odorless vegetable oil 5 tbsp. l.
Coarse sea salt 2 tbsp. l. without slide
Sugar 1 tbsp. l.
Egg C-2 small 2 pcs.
Provencal Herb Blend 1 tsp
Grated garlic 0.5-1 tsp
Grated turnip onion 0.5-1 tsp
Flour 1 grade (premium or general purpose) 500 gr. + 30 gr.
Yeast SAF-Instant 1.5 tsp.

Cooking method

  • Boil potatoes in water without salt with the addition of dry dill. Drain. Mash and cool.
  • Knead the dough from mashed potatoes, water, yogurt, salt, sugar and 500 gr. flour and yeast. The gingerbread man is very dense. Correct it with flour or liquid.
  • Cover the dough for autolysis for 20 minutes.
  • Add eggs, butter, grated onion and garlic, herbs. We knead a soft and pleasant dough.
  • Round and cover for fermentation for 30 minutes.
  • Then we divide into 6 equal parts. We roll out a tourniquet from each and turn it into a pigtail.
  • We put on proofing for 40 minutes.
  • Lubricate with protein and sugar. Sprinkle with sesame seeds.
  • We bake in a preheated oven for 10 minutes at 220 degrees and 10-20 minutes at 180 degrees.

I love potato dough. I barely managed to photograph these pigtails. They were tucked in with fresh green cabbage soup. Taste.

Irish, and 2 tbsp. l. salt is it taking into account the one that needs to be poured into the water for potatoes? Or should there be 2 teaspoons in the recipe?

Nastya, I reread the recipe. Everything seems to be so, but it burst a little. It is better not to salt potatoes when cooking. And in the dough I put 2 tbsp. l. without a slide of coarse sea salt. The dough is very potato - asks for salt. Thank you dear for your attention.

understood ... ordinary salt I think 1 tbsp. l. should be enough

Fuh, even though we are not in the south, but at home it is so hot (south side) and there are no winds on the street ... I hardly cook on the stove, and if I cook / bake, then at night.
Therefore, I came with a night report (litter for night cloudy photos): it turned out sooo tasty! The pulp is fragrant, fluffy, fine-pored and springy. I only had to reduce the salt, otherwise I drink from the salted one.
Flour was premium, onion, garlic, basil, parsley, dill (the last 3 were ground in a coffee grinder to dust). I put the yeast in 3 times less, because I did not keep track of it and they were not at home. I added a little time to kneading and raising the dough and it worked out great!
The husband asked not to mold it into pigtails, but to make it a loaf, so that later the buters could be made more conveniently. Well, I bake for him, so I obeyed.
Here is the report: the beginning of the proofing, raising in 2 times, the finished bar, the cut.
