Strawberry 0.5KG
granulated sugar 375 g
water 175 g

Cooking method

  • Girls in a hurry to share the recipe for DRIED STRAWBERRY. I searched the forum. Did not find. I searched the Internet, found something, and ended up doing something in between. Still took the recipe of Tanya-Admin as a basis Homemade dried and dried cherries
  • for which many thanks to her !!!
  • So. I made a trial batch of 0.5 kg of strawberries almost according to the recipe, only changed the drying program, dried it in the dryer and not in the oven (as it was in the recipe from the Internet).
  • The photo is here already when I was making the second batch of strawberries. So in the photo, the portions are large)))
  • I took 0.5 kg of strawberries, washed, dried, peeled off the tails (by the way, do not throw away the tails, they will go to make fermented tea from Luda lappl1),

  • poured 200 g of sugar. She shook the saucepan well and left it on the table for a day to extract juice.

  • From time to time I would come up and shake the saucepan to distribute the sugar well. After a day, all the juice was separated.

  • I poured it through a colander and set it aside. DO NOT USE strawberries for further cooking! Next, 175 g of sugar was poured into a saucepan and 175 g of water was poured. I cooked the syrup, poured the strained strawberries into it, brought it to a boil and turned off the gas. Leave it to cool for 6 hours. Six hours later, I took out strawberries in a colander with a slotted spoon.

  • returned the strawberries to it and left for another 6 hours. After a while, I took out the strawberries again with a slotted spoon in a colander, and since I didn't have much of it, I tried to spread it out one berry at a time, to dry out a small one. 2 syrups (juice after the first falling asleep of the berry and the syrup after boiling the berry) combined in a saucepan, boiled for 5 minutes and poured into a bottle for further use in winter.

  • When the berries were well laid out on a pallet in the dryer (unfortunately I forgot to take a photo. Spun) and dried at a maximum temperature of 16-18 hours, probably (the berry was VERY large, but not tasty, I bought it on the market). In the process of drying, I turned it over several times (since I had nothing to do)))), I wanted to speed up the process and try what happened. It turned out DELICIOUS! The berry retained its shape (in the sense that it did not creep out from cooking). Decreased in size quite a bit, almost only became flat from the fact that I turned it over most likely.
  • After that, I bought a bucket of VERY tasty, sweet and hard strawberries from a friend (from whom I buy berries every year) and decided to repeat the experiment. But since a bucket of 12 liters of berries is not 500 g, but 6 kg., I did not calculate the strength (and besides this, there were other blanks and the little granddaughter demanded attention) and was very tired, I wanted to shorten the cooking process and I decided to do as I did in last year cherries (according to a simplified recipe). That is, she covered the berry with sugar at the rate of 400 g per 1 kg of berry and left it to settle on the table until the juice was released. As soon as the juice stood out (it was after 4 hours), I drained the juice and added 200 grams of sugar to IT, returned the berry to the pan, brought it to a boil and turned off the heat. Left to cool. After 3 hours, I strained everything, the berries were no longer dried in a colander, since there were a lot of them, I immediately laid them out on nets in the dryer and set them to the maximum. They dried in about the same way, BUT THE RESULT WAS DIFFERENT! The berries are SIGNIFICANTLY reduced in size!

  • I think this was due to the fact that I shortened the time for separating the juice and further aging in the sugar syrup. But still, the berry turned out to be delicious. My granddaughter appreciated it. She is only 1.9 months old, but after she tasted the berry, she constantly took me by the handle and led me to the kitchen for the next portion)))
