Spinach powder

Ingredients

spinach leaves option

Cooking method

  • I decided to expose it as a separate recipe, and not write somewhere in the topics, so as not to get lost.
  • Take spinach leaves, rinse, remove from the stems (but do not throw them away either). We rinse everything under water, dry it slightly in any way available to you (both stems and leaves, only separately). Next, we put the leaves in a saucepan with a thick bottom and extinguish them on a small fire until they are dark green. They will decrease VERY much in size.
  • Here is a photo from a different recipe, but the principle is the same. I didn’t take pictures, because I wasn’t going to exhibit it as a separate recipe. But after "Garlic Arrows", I thought that this recipe could also be useful to someone.
  • Spinach powder
  • Spinach powder
  • Then we cool the leaves, lay them on marshmallow trays and dry them in the dryer. I dried on medium temperature overnight. But it is possible on a high, if in the afternoon. Next, grind in a grinder-coffee grinder. I have Proficuk. We do the same with the stems. They were stewed-dried-chopped separately. Since their color is lighter, yellower.
  • All!
  • Spinach powder
  • I'm going to use it for dyeing dough.

Note

In the photo I have that number. which turned out from three large bunches of spinach (I didn't take a picture of the powder from the stalks, there is still 50 ml probably). That is, only 100-110 ml of powder.
To prevent the question "why stew" spinach, I'll answer here.
Girls, when I make the dough for dumplings colored, I noticed that if the spinach is stewed a little, then the color turns out much brighter with a smaller amount of spinach and it is crushed more uniformly, without inclusions.
I always subject it to a little heat treatment.

Spinach powder

Spinach garden - vegetable annual herb 25-50 cm high, forming at the beginning of the growing season a rosette of triangular-spear-shaped or oblong-ovate corrugated leaves, later - a flowering stem: Homeland - Western Asia. Cultivated in all agricultural regions of the world, in Russia - since the 18th century. Only young spinach leaves are used for food, taken before the appearance of the stems, which contain 2.9% protein, 2.3% carbohydrates, fats, fiber, mineral salts (especially iron - up to 2 mg% and potassium - 77.4 mg%) , 4.5 mg% carotene, 55 mg% vitamin C, B vitamins, etc.

Spinach is used in dietary and baby food, as it is well absorbed by the human body, improves the activity of the pancreas and salivary glands. It is used most often boiled in mashed form (mashed potatoes with croutons, casseroles, sauces, various seasonings for dishes). You can cook spring green cabbage soup from it (since the taste of spinach is insipid, sorrel is added to it), salads, it is fried and poured with an egg. Canned food "Spinach-puree" (all valuable qualities of spinach are well preserved in them) allow you to have a highly nutritious product in your diet at any time of the year.

Spinach bears its first harvest in early spring when there are no other fresh vegetables yet. It is harvested when 5-6 fully developed green leaves appear on plants, 30-35 days after germination (45-55 days after sowing). Do not pick spinach immediately after watering or rain, as the leaves are very fragile and break easily at this time.

Store spinach at 0 ° C and 90% relative humidity for up to 6 days. Main varieties: Victoria, Gigantic, Godry, Zhirnolistny.

Mila1, Lyudmila, thanks for such a cool idea! It seems that everything is simple, but I didn't think of it ... I also make noodles with spinach, but I just admired your chic cupcake. And then you reminded me ... I will definitely stock up on spinach powder now, I will report. I want to try both the dimmed and "live" version.

Evgeniya
Lyudochka, actively engaged in the preparation of spinach
From 800 g fresh, about 60 g of dried spinach leaves and 10 g of stems
I report Spinach powder
Mila1
Evgeniya, Zhenya, thanks for the photo! It looks very nice. I have a way out too. From about 1 kg, a 100 ml jar turned out (these are leaves and stems, I just have them in different jars) And the colors are the same. From the stems, a green-yellow powder. I would like to test how much it needs to be added to the dough, but so far there is no time
You need to go to the market for spinach, but there is no time
Evgeniya
I also stewed the spinach. Luda, I'm also trying to figure out how much powdered spinach you need to put in your Turkish muffin ... Probably, so far only by the color of the dough can be determined.

Now I looked, they put 1.5 tsp in a green cookie for 200-220 g of flour. with a slide of matcha tea. Maybe you can at least focus on this proportion ...
Mila1
Can it come from fresh weight? If the recipe requires 200 g of fresh, then put 15-20 g of dry?

curd jelly, in the bottom layer - spinach powder Spinach powder Spinach powder
Mila1
Evgeniya, Zhenya, JUST SUPER IT WAS !!!!! Here I am wondering how much flour, how much dry spinach did I put in? Just a superb color came out
And put the curd jelly in a separate recipe, please. It turned out very cool
Evgeniya
For noodles, it is convenient to mix the powder with flour. I made noodles: I added 2 tsp for 3 cups of flour. powder. The most interesting thing is that the dough is quite bright, and the bottom layer of jelly is milky green.
Lyudochka, submitting a recipe for me is a separate feat

Thank you very much for the spinach recipe, I did it for the first time. Everything worked out great. She dried it on parchment, then turned over the sheets with the parchment as they dried up, and as they dried up, she tore off the parchment and dried it out without it and in a broken form. I honestly thought it wouldn't work, but everything worked out great.
