Duck breast with bell pepper

Ingredients

Duck breast fillet without skin 3 pcs.
Bell peppers 1 PC.
Celery stalk 1 PC.
Garlic 1 clove
Granulated sugar (preferably cane) 1 tsp
Soy sauce (regular) 2-3 st. l.
Rice vinegar (can sushi vinegar) 1 tbsp. l.
Ground ginger 1/2 tsp
Sesame (toasted) taste
Vegetable oil 2 tbsp. l.

Cooking method

  • A quick dinner for Chinese food lovers
  • Duck breast with bell pepper
  • Duck breast fillet without skin (peel off the skin, if any, and use it later for delicious cracklings and melting fat for divine fried potatoes) wash, dry with a paper towel, cut across into strips.
  • Wash the bell peppers, cut in half lengthwise, peel and cut across into thin strips.
  • Wash the celery stalk, cut off the ends, cut across into strips.
  • Peel the garlic, chop finely (do not use the garlic press, it will not work here).
  • Duck breast with bell pepper
  • Heat a frying pan with vegetable oil "almost to smoke."
  • Put pieces of duck breast in a pan, fry for 5-7 minutes, often stirring with a spatula, until golden brown.
  • Duck breast with bell pepper
  • Add chopped peppers and celery, and ground ginger to the pan and fry with the meat, stirring with a spatula, for 2 minutes. The pepper does not need to be fried until it is completely cooked (soft and lethargic) - it is desirable that the pieces retain their shape and remain a little dense.
  • Add finely chopped garlic to meat and vegetables and fry for another 1 minute.
  • Add sugar, soy sauce, and rice vinegar to the skillet. Stir continuously and cook for another 1-2 minutes. The sugar should completely dissolve, and the meat and vegetables should be covered with a soft caramel crust.
  • Duck breast with bell pepper
  • Put the cooked meat with vegetables on a dish and sprinkle with toasted sesame seeds (to taste).
  • Duck breast with bell pepper

  • It goes well with steamed rice, fried noodles, green beans, and more.

Maria! And again, it was your recipe that interested me. I wanted to ask you this. 3 fillets of duck breast is at least approximately how much by weight? 1 fillet is both fillet halves from one bird?
mvala
Masha Ivanova, Elena, three fillets are exactly as in the photo at the beginning, three halves of the breast, that is, from one and a half birds
It was experimentally found that two fillets for two hungry eaters who came home from work are not enough, and four are a lot. Therefore, I propose to cook exactly three. Duck breast fillets are often sold with skin (just don’t throw this skin away, it’s a unique source of the tastiest cracklings and ghee for fried potatoes !!!)
Depending on the size (and age) of the birds, one fillet (half breast) can weigh between 200 and 350 g (wet weight). I usually get medium, 250 grams. Total comes out about 700-750 g of raw weight, after frying it remains somewhere 400-450 g. If you add rice, fried noodles, soy sprouts, bamboo, green beans or any other suitable side dish for taste, will be just for two hungry. Try it, yummy - you can eat your mind ...

I really want to try, I feel that it will be yummy. Just tell me, what can replace rice vinegar if I don't find it in our capital of Siberia so quickly? Maybe apple?

what can replace rice vinegar
Masha Ivanova, Elena, you can try this replacement - mix 1 tbsp. l. apple cider vinegar, 1 tsp. sugar, 0.5 tsp. salt and 2 tbsp. l. hot water. Stir until sugar and salt dissolve. You will get about 3 tablespoons of vinegar solution, which tastes like what you need.Use as directed (1 tablespoon, respectively).

Maria! Thank you so much! Tomorrow or the day after tomorrow I will try and write about the results.
