Wheat-rye buns

Ingredients

Wheat flour 1.5 cups
Rye flour 1.5 cups
Water 310 ml
Salt 1.5 tsp.
Sugar 1.5 tbsp. l.
Grows. oil 1 tbsp. l.
Dry yeast 2 tsp
Panifarin 3 tsp
Dry starter culture 1 tbsp. l.

Cooking method

  • Kneaded the dough in a bread maker, mode - rye bread
  • Divide the finished dough into several small pieces. Roll a ball out of each, shape into a loaf and place on a baking sheet.
  • Cover and let the dough rise again.
  • Make notches on the buns and put in an oven preheated to 200C for 20 minutes
  • Wheat-rye buns
  • Bon Appetit!

I have baked buns twice according to your recipe - homemade buns are scattered every time in one sitting and ask for more

I made them with small deviations from the recipe - for lack of EctraP I just put in malt, used oil from dried tomatoes (it is spicy with herbs) and put the filling - dry tomatoes, all sorts of herbs (ala rosemary, marjoram, basil) and slices of Adyghe cheese - it was delicious

Of course it is possible. Last time I added brewed malt instead of Extra P. Watching how to sculpt wake up. I got 9 rolls yesterday, 1 baking sheet

How do you brew malt? Are you just pouring boiling water? Do you leave to cool or add all the other ingredients at once? I want to knead dough in a bread maker

I take 4 tablespoons of malt for this recipe, brew it with boiling water without a slide. Well, I pour it on the eye. I stir everything and let it cool. I add to the rest of the ingredients when the malt is not hot. Panifarin can be replaced with fiber or even forget about it)

My scarecrows, of course, are very different from the original, and the pale-faced ones came out baked in xn 25 minutes on a dark crust .. Maybe 35? Although the crumb is very tasty, everything is baked, soft.
