Ingredients

For citrus kvass (everything citrus that is sad in the refrigerator):
Orange 1 PC
Small grapefruit 0.5 pcs
Mandarin 1 PC
Citrus zest (if any) 2-3 ribbons of 5 cm
Rosehip dry handful
Apple 0.5 pcs
Liquid fruit yeast 100 ml
Or leavened wort, leavened leaven according to instructions
Sugar, honey, syrup to taste (I have sugar 5-6 tablespoons)
Water 2.5 l
For smoothies:
Grapefruit medium 1 PC
Sugar, honey, syrup taste

Cooking method

  • 1. Making citrus kvass.
  • Everything is described in great detail in the ingredients, but you can take the remnants of any citrus fruits that are lost and dried out a little in your refrigerator. I did it.
  • I took a can of 3 liters.
  • There was a bitten off and forgotten green apple in the fridge - cut it into quarters,
  • small drying grapefruit - scalded, brushed, peeled off the zest with a vegetable peeler, removed the white layer, disassembled into slices,
  • sad half of an orange - cut arbitrarily with zest,
  • tangerine - peeled, disassembled into slices.
  • I loaded everything into a jar.
  • I soaked a handful of wild rose in boiling water in advance - I also sent it to the jar.
  • For aroma, I also added dry zest with ribbons with vanilla and a few mugs of dried oranges for coffee, in short, whatever came to hand.
  • Poured 100 ml of liquid yeast according to the recipe Ludmila lappl:

  • 6 tablespoons of sugar, about 2.5 liters of water.

  • Leave the kvass to ripen for several days.
  • It turned out to be a bit too long for me, because it was not hot at home and the yeast was young. If your yeast, kvass wort or sourdough is in full force, the kvass will be ready faster.
  • After 1.5-2 days, kvass is almost ready, pour it into plastic bottles, add raisins and a little sugar, send it to the refrigerator for ripening.
  • Or make kvass according to your own algorithm.
  • 2. Making a smoothie:
  • The next day we take a medium grapefruit, scald it, wash it, remove the zest with a vegetable cutter (the zest will go to the next portion of kvass), clean the slices from seeds and films.
  • In a blender, turn the grapefruit pulp into a smooth smoothie.
  • 3. Making kvasso smoothie:
  • Innings:
  • Pour the smoothie into glasses, filling them by a third / quarter, fill them with effervescent cold citrus kvass from the refrigerator, add honey, mint leaves to taste, or add nothing and enjoy an invigorating, vitamin, cool kvasso smoothie.
  • If the kvasso-smoothie is not interfered, a wonderful citrus foam forms on top, then there is a layer of grapefruit, refreshingly sour, with bitterness, smoothies, and below - sweetish, effervescent and tickling citrus kvass! All this tingles your nose and makes you squint your eyes with pleasure in anticipation of coolness and cheerfulness.
