Ingredients

Eggplant (small) 1 PC
Leek (small stem) 0.5 stem
Celery 3 petioles
Carrots (small) 1 PC
Tomato (medium) 1 PC
Fresh parsley 3 branches
Fresh dill 2 branches
Garlic 2 large cloves
Parmesan cheese on demand
Vegetable oil on demand
Dry mix Italian herbs taste
Salt taste
Four Pepper Blend taste
Sweet pea 1 pea
Bay leaf tiny leaf
White Wine Vinegar (5%) 2 teaspoons
Pumpkin seeds handful

Cooking method

  • Antipasti are hot appetizers served before the main course (in Italy the main course is pasta, therefore antipasti is "before pasta").
  • You can cook this dish in a regular frying pan on the gas hob, but I cooked in a slow cooker.
  • Install the Baking program. Put celery cut into half rings into the multicooker bowl, add a little vegetable oil, a little salt. Fry for 5 minutes with the lid closed.
  • Add the diced eggplants, add the vegetable oil (as needed and to taste), salt, Four Peppers mix, Italian Herbs mix. Fry for 5 minutes with the lid closed and 3 minutes with the lid open.
  • Add the leeks cut into rings, medium-sized carrots, diced tomatoes, a handful of pumpkin seeds. Add salt and pepper if necessary. Fry for 5 minutes with the lid open.
  • Install the "Stew. Soup" program. Add 2-3 tablespoons of water, white wine vinegar, a pea of ​​allspice, a tiny bay leaf, chopped parsley and dill to the multicooker bowl, and, if necessary, vegetable oil and salt. Simmer for 5-10 minutes (until the vegetables are soft).
  • Turn off the multicooker. Add the garlic crushed in the press, grated cheese on a medium grater into the bowl. We mix. Let it brew for 5 minutes.
  • Serve as a hot snack.
  • Can be served individually on "Borodinskiye" crispbreads from "Dr. Korner" (only immediately before the meal, otherwise the breads will become damp).

Note

The appetizer should be quite spicy (but it can be made for every taste in terms of spice content)
It is also delicious when cold.
