Cooking method

  • Ajapsandali is a common dish in Caucasian cuisine, it is prepared in Georgia, Armenia, Abkhazia and Azerbaijan. The name of the dish, translated from Turkic dialects, means "how delicious you are." And it is true! The taste of the dish is delicious !!
  • Mandatory ingredients include: eggplant, tomatoes, bell peppers, onions, garlic, cilantro, basil. Carrots and potatoes are often added. I cook this dish without potatoes (although I also tried with potatoes for the sake of experiment), but with carrots.
  • Do not substitute parsley for cilantro, cilantro gives the dish a very special taste!
  • This dish requires large cutting of vegetables (except for tomatoes, which must be cut very small).
  • Very often there is a recipe for this dish without preliminary frying and stewing vegetables (except for eggplants). I also cooked using this technology, but I don't like it that much. You don’t have to spare time for this dish, the result will pay off!
  • To prepare this dish, you need a lot of vegetable oil, but there's nothing you can do about it, vegetables must be fried and stewed in oil, without adding water (otherwise the taste of this dish will be "not the same"). I try to add oil as little as possible (without sacrificing quality and taste).
  • We set the "Baking" mode, the time was set automatically for 1 hour, but I cooked in this mode for 50 minutes. Cut the red bell pepper into large pieces, put it in a multicooker bowl, add vegetable oil, salt, the "Four Peppers" mixture. Fry for 10 minutes with the lid closed and about 20 minutes with the lid open, stirring occasionally and adding oil as needed. You need to focus on the full readiness of the pepper to softness (while the smell of "baked pepper" appears). If the amount of oil is greatly reduced, then the pepper will be fried, but we need it to be stewed (however, the pepper should not "float in oil", we need to find the optimal amount of oil).
  • Simultaneously fry the eggplants in a pan on the gas panel. Cut the eggplants into four parts along the fruit, salt, pepper, add vegetable oil. Fry in oil over low heat until cooked through (the eggplants should be soft and ruddy), periodically turning over and adding oil. Put the eggplants on a plate on a double layer of paper towels, cover the top with a second layer of towels, press.
  • From the multicooker bowl, put the pepper on paper towels (if there is no excess oil, then you can do it without towels). I didn't have any excess oil in the bowl, so I didn't dry the peppers.
  • Put onions, cut into large half rings and carrots, chopped into cubes in the multicooker bowl. Add salt, pepper, vegetable oil. Fry for 10 minutes with the lid closed and about 10 minutes with the lid open. Stir occasionally and add oil if necessary. You need to focus on the degree of readiness of vegetables. Carrots and onions should be completely cooked, but stewed, not fried.
  • Install the "Stew. Soup" program.Put pepper, tomatoes cut into very small pieces in a multicooker bowl for onions and carrots. Add salt and pepper if necessary, mix thoroughly. Simmer for 10 minutes with the lid closed. Add chopped cilantro, parsley and basil, a little hop-suneli. Simmer for 5 minutes under the lid. Put the eggplants in the multicooker bowl (I cut them into halves, since they were poorly placed in the multicooker bowl). Mix thoroughly. Simmer for 5 minutes with the lid closed. Add garlic chopped in a press, mix. Simmer for 5 minutes with the lid closed.
  • We set the "Auto-heating" program, let the dish brew for about 10 minutes.
