Ingredients

active wheat sourdough 100% moisture 200 grams
wheat flour 1 grade 240 gram
pumpkin flour 70 grams
water 200 grams
sugar 1 tsp
pressed yeast 3 grams
salt 9 grams

Cooking method

  • Feed the starter culture 4-8 hours before kneading. The rise time depends on the strength of the leaven and the temperature in the room. The finished sourdough rises 2-3 times. There are bubbles on the surface and it is about to begin to fall off.
  • We knead in any available way.
  • I kneaded in HP on the 7 * 5 * 12 program.
  • Mix yeast with water and sugar.
  • Mix the liquid with the sourdough and add flour.
  • After 7 minutes of kneading, add salt.
