Princely Lenten - small loaf (for Redmond RBM-1906)

Ingredients

Water 200 ml.
Sugar 13 gr.
Salt 8 gr.
Wheat flour (high quality) 260 g
Rye flour 50 gr.
Rye malt 15 gr.
Yeast (SAF-Moment) 3 gr.

Cooking method

  • Pour water into the bowl of the bread machine. Pour salt and sugar there. We put the bowl in the bread maker. We choose mode number 8 - "Unleavened dough". To avoid splashing the glass of the bread maker, cover the bowl with a piece of stretch film. We include. This whole mixture will be mixed for 15 minutes. During this time, we weigh out wheat flour, rye flour, malt and sift it through a sieve mug into some container. We weigh the yeast in advance. (I use a weighing spoon - it's very convenient!). After the end of the "Unleavened dough" mode, we take out the bowl. Pour the mixture "wheat flour + rye flour + malt" into the bowl and, on top of the flour, pour the yeast. We select mode # 1 - "Classic bread", crust - "Light", weight - "750 grams". After the end of baking, you need to let the bread stand in the bread maker for about 30 minutes. Bon appetit!

I would like to look at the crumb closer - is there a photo?

Question: why drive water and salt in a x / stove for 15 minutes?
To dissolve salt and sugar in water, you can do this in hot water in an ordinary bowl-mug, then cool to room temperature, mix it with flour.

Hello. I'll take a photo of the crumb later (already eaten). I save time - while 15 minutes pass, I have time to weigh and sift the remaining ingredients.
