Ingredients

Cooking method

  • The other day, my beloved girlfriend treated me to blueberries. We ate part of it with sugar, and I also ate sour cream (mmm, I love it), under the bewildered glances of my household. And from the rest I decided to bake something. I found this cake in one of the mailing lists. Since I love shortbread dough, and the combination of sour cream and blueberries, in general, the pie had no chance of remaining unbaked.
  • Beat softened butter (do not melt) with 150 g of powdered sugar.

  • Add eggs and beat again.
  • Add the sifted flour with soda to the butter-egg mixture and mix. The dough turns out to be rather soft.

  • We spread it in a split form 22-24 cm, oiled. I don't have such a shape, but I have a ring. I wrapped it in foil, greased the sides with oil, and put a circle of baking paper on the bottom. Smooth the dough and put in an oven preheated to 180 degrees for 10 minutes.

  • While the cake is in the oven, beat the sour cream with the remaining powdered sugar and vanilla. Add the berries to the sour cream, after the time has passed, we take out the cake and put the filling on top.

  • We send it to the oven for another 30 minutes.
  • After the end of the time, turn off the oven, open the door slightly and leave the cake to cool in the oven. About an hour later, I sent it to the refrigerator for a couple of hours, on the advice of the author of the recipe.

I replaced the butter in the dough with ghee in a ratio of 1: 0.8 (120 g ghee). I boldly replaced the powdered sugar with fine sand - everything was mixed perfectly. Purchased sour cream is very thick - the filling turned out to be tender, but dense.
With a detachable form, I have an ambush - it burns godlessly, especially the bottom. You can't scrape it off ((But Ksenia suggested a way out here too. I took a ring off the mold (it's easier to shake out a not tall pie from a ring), treated it with a non-stick mixture and put it on a baking sheet covered with a silicone mat. When baking, a little dough escaped from under the ring , but not critical.
They were not allowed to stand in the refrigerator - half were credited immediately. The other half stood in the kitchen until morning. And it seemed to me that endurance is really good for the pie.
In general, I will repeat. And not only with blueberries. Thank you!

Yesterday I baked a pie, but not with blueberries, but with currants - red and black in a mixture. It turned out to be a very interesting combination - a rather sweet bottom (although I slightly reduced the sugar) and the top is sour and tender. I also made the bottom cake thinner, divided the dough into two forms, one detachable 22 cm, the other silicone in the shape of a small heart. I added a lot of berries, maybe whipped sour cream remained from Ladies' fingers and had to be used. Very very interesting cake! the bottom cake, in my opinion, is not sandy, but closer to the cupcake. It will be interesting to try the recipe with frozen berries. Next time I'll try to make the layers approximately equal, for the harmony of tastes, it's still very sweet for me. Thanks for the recipe!

I got a very tasty pie, baked in a 33 by 22 form on paper. Has risen well, although smeared with 1.5 layers, the filling is enough. Very tasty, a lot, and I will definitely use this dough for other options. I am very grateful for the great recipe that brightened our evening and refreshed pleasant memories!
