Eggs (divided into whites and yolks) 250 g

Cooking method

  • Dear friends! I have been reading and visiting your forum for a long time, but for the first time I decided to draw up my recipe. For the third year now I've been fond of cooking and feeding everyone around ☺
  • You have taught me a lot, I have learned a lot from various culinary sources. Here I will try to summarize and share everything with you.
  • I will try to present everything as detailed and accurately as possible, I will share the tricks that I use myself.
  • So, let's begin.
  • First of all, about the finished product itself. At the exit, we have a casserole with a rather rich chocolate flavor, tender, soft, moderately sweet, slightly moist. It can be safely called a cake. The most interesting thing is that it is completely unclear that the main ingredient is cottage cheese. The chocolate flavor is accentuated by the chocolate ganache on top.
  • All ingredients are listed in the order in which they are used.
  • Soak the semolina in kefir for at least half an hour.
  • We boil milk, add cocoa to it. Stir and let it brew. This is the first trick. According to many culinary gurus, pre-brewing cocoa gives it the opportunity to develop its chocolate flavor richer. 10 minutes will be enough.
  • In the bowl of the food processor, mix the swollen semolina, brewed cocoa, cottage cheese and yolks. Add a pinch of salt, a packet of instant coffee and rum (I use rum flavor). This is the second trick - the friendship of chocolate, coffee and rum.☺ My favorite combination. The more carefully you interrupt the mass, the more uniform the structure of the finished product will be. You can also use a hand blender at this stage.
  • In a perfectly clean bowl, drive in the whites to the peaks at medium speed. By the way, we take eggs at room temperature. So the whipped whites will give a more thermo-stable foam (I also subtracted and checked this many times ☺). Add sugar in a tablespoon and continue to beat. Add vanilla at the end. We need exactly the middle peaks. So don't overwhelm. The amount of sugar is selected exactly so that our finished cake has a moderate sweetness, but also so that it fixes the proteins so much so that they do not fall off during baking.
  • Gently and gently add the whipped proteins to the curd mass. It is at this stage that I already begin to actively eat the semi-finished product ☺
  • We spread the resulting mass in a pre-greased multicooker bowl. We level with a spatula.
  • Baking mode 60 min
  • "Heating" 60 min
  • Then we hold for another 15 minutes under a closed lid in the turned off multicooker.
  • Open the lid very carefully.
  • Let it cool and use the steam basket to remove the casserole.
  • Cooking ganache.
  • We boil milk. We mix chocolate and hot milk. Gently mix the mixture until the chocolate dissolves, being careful not to bring in air so that bubbles do not form.
  • Pour the cooled but still flowing ganache onto the cooled casserole. We level.
  • Decorate the children's side with sweets ☺
  • As you can see, I took a little for children's needs ☺☺☺☺

  • P.S. I love casseroles sooo. This is my area for experimentation. I just have some kind of casserole mania. Both white and chocolate, and with or without additives. Warm, cold - they somehow disappear from me completely without a trace.

I bake simple casseroles of about this size at 160C for about an hour. Then I don't open the oven for another hour.
I haven't tried this one specifically.

Rosalia, I think that you shouldn't worry so much about the proportions. This is, in principle, a casserole, although probably more soufflé turned out in consistency.
Baked at 160 degrees with convection for an hour and 20 minutes stood in the off oven. Everything rose strongly above the mold during baking, but after standing, fell off and shook without any problems. My form is silicone

I think you can increase the whole recipe by 30 percent. Then just get a height of about 5 cm.
And you can bake the same, but it will be lower. And if you don't like the height, then cut into two halves and glue with chocolate)))

Yesterday I made a casserole. Yes, it doesn't look like cottage cheese. Not very warm when warm, but tasty cold. It seemed to my grandmother a bitterish (well, I think this is because of the cocoa - it was brought from the DR and differs from our store). And probably you should try to soak the semolina in cream, otherwise kefir gives acid. I prefer less sour casseroles. When baking, it rose above the form and the top cracked, then settled. I think you can do it for a change.But I didn't understand the rum for what - I didn't get any taste or smell from it. And so thanks for the interesting recipe. I didn’t take a photo, the fotik was discharged - but the casserole had already been eaten.
