kefir 3.2% 0.5 liter
cream 1 glass

Cooking method

  • Pour milk, kefir (I have 8.5% yogurt) and cream (any) into the multicooker bowl, mix well with a whisk.
  • We turn on the egg program for 30 minutes.
  • The temperature on the egg program in my multicooker is 70 °, the countdown on the program starts after the contents of the bowl are warmed up.
  • After the end of the program, cool the mixture, then put it in a colander on gauze or a thin cotton cloth (towel).
  • It took me two hours. I even put a small load.
  • Then she whisked a little in a Kenwood food processor.
  • Transfer to a container and refrigerate. Within an hour, the mass becomes thicker.
  • You can add salt, spices, herbs, for every taste.

Warm-up program Or, it turns out faster, with a stew or milk porridge program. Do not trace the current, the temperature should not rise above 80 ° and, moreover, should not boil.
Ofeliya
Indeed, a very interesting recipe. You should definitely try it!

Nadyush, I think 20% and 10% will come off, but I would leave 30% more on cream or ice cream, I feel sorry for spending such cream on cheese

Thank you so much for the recipe, I will definitely cook! And because I count calories, because in the process of losing weight, next time I will do it with 10%!

vernisag, Irishka, pryvet !. very on time you laid out the recipe ... today I have to fit a 3-liter can of milk)))
Now tell me, dear man, how long do I have to eat all this, so that the little one won't talk with the pot for days? Well this is 3 liters of milk, one and a half liters of kefir, 3 glasses of cream ... but I won't burst?
vernisag
Quote: Vinokurova
won't I burst?
You will burst. Why do you need Alenka, so much cheese at once? This kilo will work out, or even more. I don't think it can be kept in the refrigerator for a long time.
Make a liter of milk, try it first, suddenly you don't like it

Melalenka
vernisag, Irina, Thank you!! It's very simple, fast and delicious. Made in Tescoma (for soft cheese) - stack very quickly. The taste is soft, delicate, not sour (made from store-bought packaged milk and kefir) Added Italian herbs and pink salt and ... mmmmm ... I enjoyed the morning with coffee. Thank you!!! I did it! Moreover, it is inexpensive and very tasty
(Warmed up in baby Filka in manual mode for 30 minutes at 70 g until the end of the program)

Straight liquid, liquid turned out? It should be like 20-25% sour cream, then it will harden in the refrigerator and will be a little denser.

We don't have such milk, I don't know what it is. I buy only local, it is natural, from milk. Now many milk is made from whey, with the addition of milk powder and palm oil. I don't think you can make cheese out of it ...
Our milk, if poured into a jar, after standing in the refrigerator, defends the sour cream on top.
And all these "house in the village", "cheerful milkman" and others, sour cream does not exist in bottles at all, nothing is defended, although the fat content is high ...
Vinokurova
Irinka, Zaya, don't get started ... in the evening I will look at my cottage cheese from milk from a cow and I will be sure to report))) I give a tooth)))

vernisag, Irina, please scribble in a personal, what kind of milk do you usually buy?

Ahh, maybe ... the serum didn't come off as it should. Is the serum whitish? It should be transparent. The temperature may not have been enough, at 80 ° maybe it should have been done
