Stewed eggplant

Ingredients

eggplant 5 pieces
tomatoes 5 pieces
onions 2 heads
1 bunch parsley
potatoes 4 pieces
black pepper and salt to taste
sunflower oil 4 tbsp. l

Cooking method

  • Take a larger pan. Cut off the stem of the eggplant. Place whole eggplants in a skillet. Cut the onion into half rings and put next to it, cut the potatoes into small cubes, put them in a bunch in one place, finely chop the parsley, put next to the vegetables. If there is room left in the pan, place 5 tomatoes on it. If there is no room left, cut the tomatoes in half and place the cut side on the eggplant. Season with salt, pepper and butter. Cover the skillet with a lid and simmer over low heat until the liquid is completely boiled. About 1.5 hours. When in the heat you don't want to stand at the stove this is it. The most delicious is potatoes.
