vanilla sugar 2 packs
vegetable oil 1/2 cup
semolina 1/2 cup
baking powder (optional) 1 tsp
pitted cherry
Dough
warm water 220gr
salt 1 tsp
sugar 1 tsp
sunflower oil 30gr
premium wheat flour 400gr

Cooking method

  • I continue a series of recipes with homemade Filo dough, which we make and roll out ourselves.
  • I showed how to make the dough in the previous recipe, I told everything in detail and there is a detailed video on how to roll out the dough)

  • The dough is ready, and while it is resting, we make the filling.
  • I have a measuring cup 250 ml
  • Beat the eggs with powdered sugar and vanilla sugar until frothy, you do not need to beat until white, just until a stable foam.
  • Add yogurt, semolina, vegetable oil to the beaten egg mixture. Gently mix by hand with a whisk and leave for 30 minutes to swell the semolina.
  • I did not use a baking powder, but you can put it when the semolina swells and mix.
  • I have homemade cherries, I pulled out the seeds and sprinkled them with powdered sugar, about 1 tablespoon of false. Can be used from a store that has been frozen. But you must first defrost it.
  • Roll out the dough until the filling is in good condition.
  • For Strudel or Pita, you need only 1 of the three koloboks into which we divided the dough.
  • Those with one batch of dough can make three different Pitas.
  • Roll out to the state of parchment using a special rolling pin. Do not forget that it is necessary to wind the dough on a rolling pin around the entire circle of the layer so that the layer stretches evenly from all sides and when the layer of dough fills the whole story completely, with winding from either side, then you have reached the goal))
  • We take a knife and cut the layer into three uniform parts, the stripes will be three layers of Strudel.
  • Lubricate the first layer with sunflower oil, it is best to spray the oil from the spray. Then we take the filling, it turned out like condensed milk in consistency. Apply on the first layer.
  • We proceed to the second layer, also sprinkle with sunflower oil and grease with an egg-semolina mixture.
  • Gently drag the second layer onto the first.
  • Let's start with the third layer.
  • Drag it to the second layer and spray sunflower oil over the entire surface. Next, take the cherry and distribute it over the dough.
  • Now we twist three layers into one roll.
  • A baking dish will need a rectangular shape. We cut the roll into three even parts and put it in the shape along.
  • Pour the egg-semolina mixture on top.
  • Preheat the oven to 180-200g
  • We set to bake for 40 minutes, but look at the crust.
  • When the strudel is ready, take it out of the oven and let it cool.
