Ingredients

chocolate waffles 150 g
chocolate 180-200 gr
For glaze
chocolate 100gr
cognac 2 tbsp. l
cream 3-4 tbsp. l

Cooking method

  • Beat the eggs with a pinch of salt and sugar for about 7 minutes, with a mixer at high speed, into a lush viscous foam.
  • Mix the hazelnut crumb with cocoa, starch and baking powder. Add the dry mixture in portions to the egg foam. Mix with a whisk or spatula until the dough is homogeneous, but not for long. Immediately pour the dough into a mold, the bottom of which is lined with baking paper. At the same minute, put in a preheated oven. We bake at 180 ° C for about 35 minutes.
  • Let it cool for a few minutes in the form, then take it out and let it cool completely. Cut the cooled biscuit into 2 halves.
  • We drown chocolate in a water bath.
  • At this time, we cut the waffles into large pieces, approximately 3-4 mm thick. Add pasta to hot chocolate, leaving 3-4 tbsp. spoons for coating. Mix well. And then whisk in the cheese. And add the sliced ​​waffles, mix.
  • Put half of the biscuit in a ring and spread the entire chocolate filling, level it.
  • Cover with a second biscuit, press down a little with your hands, cover and put in the refrigerator to cool for at least 3 hours.
  • Heat the paste in a water bath. Spread a thin layer on the whole cake.
  • For the glaze, melt the chocolate and cream in a water bath. Pour in cognac, mix well until smooth glaze. Fill the cake with icing. Let the frosting harden and decorate the cake. Bon Appetit!

but with a cream discrepancy. made everything according to the recipe, well, too sweet, hyper sweet, already cloying. and waffles - instantly lost their crispness, remained some sluggish rags. my tasters, who like to try both dough and cream in the kneading process, said that cream cheese and chocolate paste would be enough, and waffles and melted chocolate in this cream are superfluous.
