Rice should boil like porridge. If the rice is not cooked and the liquid has evaporated, add a little more broth or water, because we need the broth Now the most important and responsible procedure. We will prepare CHIKHIRMA! If you do everything right, you will get an amazing chicken soup. Pour the remaining stock into an enamel pot and let it simmer. While the broth is boiling, in a separate bowl, dilute 2 tbsp. l white wheat flour with 1 glass of plain water. Strain so that there are no lumps. We begin to stir the broth and pour the flour solution into the boiling broth in a thin stream. We do not stop stirring for a second! Stir continuously until the broth boils. After boiling, reduce the heat and cook for 20 minutes, stirring from time to time. After 20 minutes, remove the pan from the stove and let it cool for 10 minutes. While the broth cools down, take a larger dish and beat 2 eggs well with a fork. Add 1 tbsp. l vinegar. Continuing to beat the eggs (do not stop) Add the broth in a very thin stream. Add about a liter of broth in total. Now add this egg mixture gradually to a saucepan with broth, stirring the broth continuously. Stir for 2 minutes. Salt and add finely chopped fresh cilantro. Do not cover the pan with a lid until it cools completely. If you heat it, stir constantly and bring it almost to a boil, but in no case boil it. All this stirring is necessary so that the flour and eggs do not curl. the soup should be uniform and milky. When serving, you can add some fresh cilantro to the plate. No pepper can be added to this dish.! If you want a little more acidity, you can add a little vinegar to the plate. While we were busy with chikhirtma, our rice was cooked. Now let's make the chicken and rice mayonnaise sauce. You can make your own mayonnaise (beat 1 egg, sunflower oil, salt, a little mustache or lemon juice, garlic, hot red pepper, spices with an immersion blender) and dilute with water 1d1. Or take ready-made, add crushed garlic, 1 hour. l ground coriander, 0.5 tsp fenugreek. hot red pepper and salt to taste. And dilute with water. It will make a wonderful Sunday lunch. Serve first chikhirtma, and then delicious rice boiled in broth with chicken pieces. Pour mayonnaise or peanut sauce according to my recipe into the gravy boat. Pour this sauce over rice and chicken and eat to health.
