Ingredients

Favorite pizza dough 1 blank
Cherry tomatoes 20-30 pieces
Mozzarella (better in balls) 20 pcs.
Extra virgin olive oil for roasting and serving 5 tbsp. l.

Italian tomato sauce for pizza or tomato paste, water, Italian herbs, salt and sugar about 150 ml
Wood stove (Eh, my dream ...)

Cooking method

  • Dear ones!
  • I want to offer you a pizza recipe that amazed us, quite sophisticated and tried many different options for pizza in Italy in different regions. And we met with this pizza by chance on the second floor of the main market in Florence, which I will talk about later in my Temka about Italy, since the Florence market itself deserves a separate story.
  • The recipe itself is very simple, and the Italian-style result is wonderful and even healthier than traditional pizza.
  • - First, we take the sweetest cherry tomatoes and cut them in half. Prepare a frying pan into which we pour a couple of tablespoons of olive oil.
  • - We take the pre-prepared pizza dough and form a flat round cake from it, it is advisable not to roll the dough, but to stretch it.
  • - If you do not have ready-made Italian pizza sauce, then you can make a replacement for it in just 2 minutes. To do this, dilute a couple of tablespoons of good tomato paste with boiled water to the consistency of sour cream, add salt and sugar there to taste, as well as a few pinches of a dry mixture of Italian herbs.
  • - Spread the rolled flat cake with sauce and set it to bake in a very preheated oven or pizza oven.
  • Recently, I have been baking pizza in the oven on a preheated stone, which I raise with a metal stand higher to the upper grill. Preheat the oven to high and turn on the top grill before dropping the pizza blank. I bake for about 8 minutes. This method allows you to somehow get closer to baking in a wood-burning oven.
  • - While the pizza is baking, heat the pan with olive oil to the maximum and put the chopped tomatoes on it. Sprinkle with Italian herbs. We fry the tomatoes for just a couple of minutes, shaking them slightly, without stirring, to keep their shape.

  • - We take out our baked pizza blank, put mozzarella balls, crushed and divided into several pieces, on it, evenly distribute hot tomatoes on top, pour abundantly with olive oil and decorate with leaves of fresh basil or parsley.
  • Save the excess juice from the tomatoes for the soup. We dunk this juice, if there is a lot of it, with the edges of the pizza.
  • Our pizza is ready, enjoy another simple, healthy and, one might say, life-affirming recipe in Italian!

Yes, I forgot to say! When the pizza was collected, the pizza maker put it in the hot oven for a couple of seconds. I don’t know how this trick is suitable for the oven. My mozzarella is melted even without it from hot pomodoros.
There should be enough sauce, and it should be tender so that it does not dry out in the oven, but just warms up.
