Ingredients

sour cream from 20% at least 500 gr.

nuts, raisins, prunes, chocolate to taste and desire

Cooking method

  • There are never too many honey workers! Probably, I reviewed everything with us, but I did not find this one. The recipe is old, from a notebook that was started back in school years, and, therefore, tested more than once. And, by the way, he allows liberties in cooking, which do not spoil the cake at all, but only slightly adjust the taste.
  • So the dough.
  • Beat eggs (size is not important) with sugar, add honey and butter, put in a water bath for 25 minutes, do not forget to stir. Then we add soda and, with constant stirring, keep it for another 5 minutes, the mass will increase, but not much, a two-liter saucepan is enough for this process. Remove from the steam bath and cool for about 15-20 minutes. Add flour starting at about 2.5 cups. Sometimes it may take up to 4! glasses. It is better to cook the dough with your hands, it should be slightly sticky to the touch, very similar to shortbread. Divide the dough into 10 pieces, roll it out, immediately cutting out circles on a plate or lid, crush the cuttings and roll it out again. Cakes can be rolled from very thin ones - through them records on paper are visible (then there are quite a lot of scraps and more cakes are obtained from them) to rather plump ones when the cake is rolled out without scraps. I usually get 13-14 thin cakes with a diameter of 21 cm.
  • Here I would like to say about those liberties that I spoke about at the beginning.
  • If you initially take large eggs and honey, not melted, but thick and with a heaped spoon, then the dough will take much more flour, and, therefore, we will get more ready-made cakes that practically do not differ in taste from the original version. With this method of cooking cakes, up to 20 are obtained! pieces.
  • We bake the cakes in an oven preheated to 200C at a medium level (the baking sheet should first be sprinkled with flour) for literally 2 minutes until golden or golden brown. There is a way to speed up the process - put 2 cakes on one baking sheet, if they turn out to be a little overlapped, they do not stick together.
  • With the cream, everything is simple: stir the sour cream (do not beat) with sugar until the sugar is completely dissolved. If 20 thin cakes were baked, then, accordingly, we increase the amount of cream.
  • I usually get it like this: honey with spoons with a slide, about 20 cakes, three or four immediately go to be eaten by households, one or two for sprinkling the cake, 15 cakes in the cake itself. Sour cream for cream then I take 800 gr., Sugar 1.5 cups.
  • Assembly. We grease each cake with sour cream, using it for about 2 tbsp. l., different fillers can be used between the cakes, but, as for me, they are not really needed there. Sprinkle the top of the cake and sides (optional) with crumbs of chopped cakes.
  • Let the cake stand at room temperature for at least three hours, then you can send it to the refrigerator. Delicious, moist and not very expensive cake is ready!
