tomato 3 pcs (500 gr.)
bulb onions 1 PC. (120 gr.)
salt, sugar taste
aromatic sunflower oil (unrefined) 1 or 2 tbsp. l.

Cooking method

  • The recipe of my great-grandmother, it is unusual, in the families of my acquaintances, I have not met this. The caviar is very tasty and has a refreshing taste. Especially for a hot summer!

  • Boil the eggplants (about 10 minutes) until soft, along with the tails.
  • These vegetables float in water, so you need to squeeze them with a heavy plate or a lid smaller than a pan in diameter. Willingness to check by piercing with a knife closer to the tail.

  • Now you need to get rid of excess moisture by placing the eggplant under oppression until it cools.
  • If you have wooden planks, lay cellophane first so that the board does not deform from moisture. An oppression weighing 5 kg will do.

I also always make eggplant caviar in a similar way, only I bake the eggplant in the oven. Now, of course, there are many other ways to bake eggplants, but out of old habit I do this, since the recipe has been in my family since my childhood. Tomatoes - to taste. I put 1-2 pieces, as they give the necessary acidity to the caviar. Sometimes I just add a little acetic acid instead of tomatoes, directly concentrated, we love more with vinegar than with tomatoes. Together with vegetable oil, delicious and sour! I roll such caviar for the winter.
