Zucchini in tomato and garlic

Ingredients

Zucchini (no difference - mature or young) 2 Kg
Tomatoes 2.5KG
Bell pepper 1 kg
Garlic (peeled) 200 g
Table vinegar 1/2 cup
Vegetable oil (odorless) 1 glass
Salt 2 tbsp. l. with a slide
Sugar 1 glass

Cooking method

  • I prepared this salad just yesterday. This is delicious! Zucchini this year is a very good harvest) Already "tired" of looking for recipes for its preparation) I liked this one the most! And the preparation is simple.
  • Zucchini should be cut into small cubes. Pass the tomatoes with garlic through a meat grinder, combine everything, add salt, sugar, vegetable oil. Put the pan on the fire, after boiling, cook for 30 minutes. Then add the pepper, cut into strips (I took the green pepper, in principle there is no difference in color, the main one is to be sweet)) and vinegar. There are no onions in the recipe, but I added 4 medium onions. Cook everything together for another 15 minutes. Salad ready! Put it in prepared and sterilized jars and roll it up.

Time for preparing:

45 minutes

Note

Cook, you won't regret it)

Yasmina, forgive me, but why so much vinegar? I close a similar mixture of vegetables for the winter without vinegar at all, tomatoes and garlic are excellent preservatives ... True, I also have carrots, to all the listed vegetables
Jiri
Bookmarked it. Thank you! And it seems to me that garlic in conservation is not a guarantor, but on the contrary, vinegar is still needed
firuza83
Ludmila, vinegar is not at all superfluous here) and besides, for such a quantity of vegetables, half a glass of table vinegar is not at all a lot ... If you like sweeter preparations, then reduce its amount. And on the contrary, I like spicy, spicy, salty, sour)) for me everything is optimal in this recipe)

I agree with you girls. Still, the recipe winter salad. And, at least, the minimum guarantees against "bombing" must be present in it.
Yasmina! Nice snack! I'll drag the recipe into the bins. I've never done this with a bow.
firuza83
Girls, I have already eaten two cans of this snack today, everyone really liked it! tomorrow, I'm already preparing food, I will make one and a half portions))

Zhannptica
How many cans from one portion and how much? To understand ...
Thank you)
tata2307
An interesting recipe!
firuza83
Zhannptica, Jeanne, from this portion it turned out about 6 liters, I "poured" them into cans of 1 - 0.7 - 0.5 liters)
Zhannptica
Thank you for quick answer. If I have time today, then I will definitely put a parteochka))

And on the contrary, I love spicy, spicy, salty, sour))

Yasmina, I still put hot peppers in such a salad.
For piquancy and one is enough.
And if hunting is sharper, then you can add a few. Also grind together with the seeds and add to the mass 5 minutes before the end of cooking.
firuza83
alba et atra, Elena, yes?) Thank you)) today, maybe I'll add a small part .. otherwise, I'm the only one here who loves spicy-spicy)) but I'll definitely try right now, I'll send the eldest to my grandmother for hot pepper))
Avanturin
firuza83, thanks for the interesting recipe. The zucchini were just lying and did not know where to attach them) It turns out very tasty when hot. I think it will be no worse in the cold)
Jiri
I cooked it, went to twist the cans, and added hot pepper too

Yasmina, I correctly understood that zucchini are not cleaned? It seems that I can see the skin on them. Or does it seem to me?
firuza83
Ludmila, yes) are not cleaned .. Although I took mature zucchini, it was a pity to let the young ones go for the winter)) I will eat them anyway, but also not stale zucchini that already have an oak crust .. It does not feel at all, soft) so clean it completely not necessary, there will be more vitamins))
Husky
Yasmina, thank you !! I made your zucchini for testing. I haven't tried the zucchini yet, but the sauce remained from them. Vkuuuuusno !! The husband said that she had left little sauce. And I didn’t leave. : girl_pardon: It happened so.
Here is my result.

Zucchini in tomato and garlic

Thank you very much, I will do more.
firuza83
Husky, Lyudochka! Very, very cool and beautiful you did it! And most importantly, you liked it) I am very glad that the recipe came in handy) thanks for the photo report

Yasmina, forgive me, but why so much vinegar?
... and I also do similar seaming without vinegar ... just like you, Lyudochka. Thank God for many years, not a young housewife))))
I didn't have any "bombardment" ones. I sterilize the jars and pour them hot.
But here is a matter of taste, if anyone loves the TASTE of vinegar, then yes!
And we DO NOT accept it at all at home and never pour it into anything!
Husky
I understand that adding or not adding vinegar depends on where the seaming will be stored. If this is a refrigerator or cellar, then it may not need to be added. And if I keep it at home in a dark closet, next to the kitchen, where ovens are constantly running and the temperature does not drop below +25, or even higher, then vinegar will not hurt. But I can't insist on anything.
mamusi
Ludmila, yes, I didn’t write because ... to insist that you, God forbid!) Just in the sense that there are options ... and such, and such. I keep everything in the basement, but it is NOT CELLULAR, that is, not cold, but NOT heated in winter. But in different years, at different times, they were kept just in the mezzanine and in the pantry, and my mother also NEVER poured vinegar. Well, we do not like ... I even "smell" him a little of the pancreas, just like that. And who tolerates it normally or even loves the taste, then why not use it! If it's so calm ...
Oroma
mamusi, Margarita! Of course, I want not to put vinegar, but somehow dumb. You have had a positive experience. Could you, separately, or in this thread, if the hostess allow, write your recipe clearly?
Mariii
Hello! I would also like to see a recipe without vinegar somewhere, I will be grateful for the link.))) And another question - is it possible to use tomato paste instead of tomatoes and if "yes" then in what proportions and how, can it be diluted with water?
firuza83
Girls, of course, you can ... and without vinegar and without tomatoes, but with tomato paste ... Only this is a completely different recipe, and the salad too ..) you can vary as you want with the ingredients, experiment - you can find your "salad ".. I haven't experimented, so I can't say anything about replacing a tomato with pasta and about its quantity ..
